Pumpkin Fig Chia Pudding Parfait

During the Fall season, I am all about pumpkin spice recipes! If you’re like me, then you will absolutely love this pumpkin fig chia pudding parfait. It has a creamy dairy free protein pumpkin yogurt layer, a pumpkin spice chia pudding, and is topped with fresh fig slices and granola for a little bit of crunch. This parfait is great to prep for an easy breakfast on the go or to enjoy as an afternoon snack!

What you will need

Pumpkin Puree – I love that pumpkin is rich in fiber, antioxidants, and essential vitamins like A, C, and E. I just use an organic pumpkin puree in this recipe.

Coconut Milk I love using the full fat coconut milk from the can becasue it makes the chia pudding so creamy!

Almond Milk – In this recipe we will use a mix of the full fat coconut milk and another dairy free milk.

Chia Seeds – These tiny little seeds are packed with fiber and omega fatty acids!

Maple Syrup – This is what I prefer to sweeten the chia pudding with. You can also use honey or monk fruit.

DF Yogurt I love using a creamy vanilla coconut based yogurt, but you can use any kind.

Vanilla Protein Powder I always like to add extra protein in my recipes to maintain my protein goals.

Pumpkin Spice – I love the flavor of pumpkin spice and it pairs so well in this recipe.

Fresh Figs – If you’ve never had a fresh fig before, you’ve been missing out!

Grain/Gluten Free Granola – I used a pumpkin fig granola by one of my favorite brands Lark Ellen Farm. You can use your favorite granola of choice.

How to make the pumpkin fig chia pudding parfait

First, in a container, mix together the pumpkins spice chia pudding ingredients and then place in the fridge for 4 hours to chill. This will allow the chia seeds to expand and absorb the liquid. Take the chia pudding out of the fridge and the add the a blender and blend for a few seconds. I prefer the texture of blended chia pudding and this method also makes it thicker.

Next, make the protein pumpkin yogurt by mixing all the ingredients together in a bowl. Add the protein pumpkin yogurt to the bottom of 2 mason jars or containers. Slice a couple figs into thin round slices to decorate the inside of the mason jar and then chop the rest of the figs into small pieces.

Layer the parfait with the round fig slices on the inside of the jar, then the chia pudding evenly between the 2 jars, then top with the fig pieces and granola. Enjoy for breakfast or as an afternoon snack! (you can double this recipe to make more for the week.)

Equipment

  • 1 Blender
  • 2 mason jars or other storage containers

Ingredients
  

For the chia pudding

  • 1 cup full fat coconut milk
  • 1/2 cup almond or coconut milk
  • 1/2 cup chia seeds
  • 1/4 cup pumpkin puree
  • 3 tbsp maple syrup
  • 1 tbsp pumpkin spice

For the protein pumpkin yogurt

  • 1 cup dairy free yogurt
  • 3 tbsp pumpkin pure
  • 1/4 cup vanilla protein powder
  • 1 tsp pumpkin spice
  • 1 tbsp maple syrup

Other ingredients

  • 1 cup fresh figs
  • 1 cup gluten free/grain free granola

Instructions
 

  • In a container, mix together the pumpkins spice chia pudding ingredients and then place in the fridge for 4 hours to chill. This will allow the chia seeds to expand and absorb the liquid.
  • Take the chia pudding out of the fridge and the add the a blender and blend for a few seconds. I prefer the texture of blended chia pudding and this method also makes it thicker.
  • Next, make the protein pumpkin yogurt by mixing all the ingredients together in a bowl.
  • Add the protein pumpkin yogurt to the bottom of 2 mason jars or containers.
  • You can slice a couple fig slices into this circles and place on the inside of the jars facing the glass for a pretty look.
  • Add the pumpkin spice chia pudding to the mason jars, and then top with chopped fig slices and granola.
  • Enjoy!
