Strawberries N' Cream Chia Pudding Parfaits

I have been obsessed with these Strawberries N' Cream Chia Pudding Parfaits lately because they taste like a dessert for breakfast! If you're not sure about chia pudding yet, let me change your mind with this recipe!! The chia seeds are blended with the strawberry milk mixture for a more smooth texture which is so good if you don't like a seedy texture. The chia pudding is layered with a delicious strawberry reduction and creamy dairy free vanilla yogurt with fresh strawberries on top for the ultimate strawberries n' cream experience!

Equipment

  • 1 storage bowl
  • 3 medium food jars with lids

Ingredients
  

  • 1/2 cup chia seeds
  • 1 can full fat coconut milk
  • 1/2 cup regular almond or coconut milk
  • 3 cups Strawberries (plus more for topping)
  • 1/3 cup plus 3 tbsp maple syrup
  • 1/2 cup filtered water
  • 1 tsp vanilla extract
  • 1 1/2 cups dairy free vanilla yogurt

Instructions
 

  • First, add 1 cup strawberries, the canned coconut milk, almond or regular coconut milk, chia seeds, vanilla extract, and 1/3 cup maple syrup to a blender.
  • Blend everything for about a couple minutes so the chia seeds break up well and you will get a creamy texture.
  • Pour the strawberry chia seed mixture into an air-tight container and store in the fridge for a couple hours or overnight.
  • Make the strawberry reduction by adding the remaining 2 cups of strawberries and 3 tbsp maple syrup to a blender. Blend until you get a puree texture.
  • Add the strawberry puree to a small sauce pan on the stove over medium heat.
  • Bring the mixture to a boil then reduce the heat to loe and simmer for about 20-25 minutes. Once the mixture is reduced, set it aside to cool down completely then store in the fridge.
  • Make the parfaits using 3 jars and add about 1/3 cup strawberry reduction to the bottom of each jar.
  • Next divide the strawberry chia pudding evenly among the 3 jars leaving room at the top still.
  • Top with the vanilla yogurt and fresh strawberries.
  • Store the strawberries n cream chia pudding parfaits in the fridge and enjoy within 1 week!
