Strawberries N’ Cream Chia Pudding Parfait
I have been obsessed with these Strawberries N’ Cream Chia Pudding Parfaits lately because they taste like a dessert for breakfast! If you’re not sure about chia pudding yet, let me change your mind with this recipe!! The chia seeds are blended with the strawberry milk mixture for a more smooth texture which is so good if you don’t like a seedy texture. The chia pudding is layered with a delicious strawberry reduction and creamy dairy free vanilla yogurt with fresh strawberries on top for the ultimate strawberries n’ cream experience!

Chia pudding is something I make almost every week now because it is something so easy for me to prep for my breakfast when I have busy mornings! Chia seeds are packed with fiber and omega fatty acids that support our health. When you soak chia seeds they absorb up to 12 times their weight in liquid and form a gel-like texture which is why it is called pudding. Chia pudding reminds me a little bit of tapioca pudding, but I know not everyone like the seed like texture so that is why in this recipe we blend the chia seeds!

What you will need
Chia Seeds – I like to get the white chia seeds so the color looks more vibrant and you can’t really see the seeds. You can use regular chia seeds as well.
Strawberries – You can use fresh or frozen strawberries for this recipe. I find that using frozen strawberries for the reduction makes the color a deeper red.
Coconut Milk – My secret for getting the creamiest chia pudding is by using full fat coconut milk from the can and we will use one full can in this recipe.
Almond Milk – You can use a regular coconut milk as well
Maple Syrup – This is what we will use to sweeten the chia pudding and strawberry reduction with. You can substitute with honey or monk fruit as well.
Filtered Water – WE will use a little water for the strawberry reduction.
Vanilla Extract – This adds a lovely flavor note to the strawberry chia pudding.
Dairy Free Vanilla Yogurt – I love using the one by Cocojune because it is so creamy and reminds me of a whipped cream.

How to make the strawberries n’ cream chia pudding parfait
Blend the Chia Pudding Ingredients
First, add 1 cup strawberries, the canned coconut milk, almond or regular coconut milk, chia seeds, vanilla extract, and 1/3 cup maple syrup to a blender. Blend everything for about a couple minutes so the chia seeds break up well and you will get a creamy texture. Next, pour the strawberry chia seed mixture into an air-tight container and store in the fridge for a couple hours or overnight.


Make the Strawberry Reduction
Make the Strawberry reduction by adding the remaining 2 cups of strawberries and 3 tbsp maple syrup to a blender. Blend until you get a puree texture. Then, add the strawberry puree to a small sauce pan on the stove over medium heat. Bring the mixture to a boil then reduce the heat to low and simmer for about 20-25 minutes. Once the mixture is reduced, set it aside to cool down completely then store in the fridge.


Layer the Parfaits
Next, make the parfaits using 3 jars and add about 1/3 cup strawberry reduction to the bottom of each jar. Next divide the strawberry chia pudding evenly among the 3 jars leaving room at the top still. Lastly, top the chia pudding with the vanilla yogurt and fresh strawberries. Store the strawberries n cream chia pudding parfaits in the fridge and enjoy within 1 week!

Equipment
- 1 Blender
- 1 storage bowl
- 3 medium food jars with lids
Ingredients

- 1 can full fat coconut milk
- 1/2 cup regular almond or coconut milk
- 3 cups Strawberries (plus more for topping)
- 1/3 cup plus 3 tbsp maple syrup
- 1/2 cup filtered water
- 1 tsp vanilla extract
- 1 1/2 cups dairy free vanilla yogurt
Instructions
