Air Fried Beef Taquitos

So I’m sure most of you like me have an extremely busy schedule between working full time and getting other tasks done in between. I don’t always have a lot of time to make elaborate meals during the week and try to make food that is quick and easy! I wanted to share with you my 20 minute air fried beef taquitos recipe that is a game changer! 

What you will need

Grass Fed Ground Beef – I am very particular about the kind of meat I choose, and for my beef I always look for 100% grass fed and finished. I believe it is very important to research where your meat is coming from and what practices are used. I want my meat to be humanly raised and the company to use regenerative agricultural practices! One of the best brands I think Is Thousand Hills.

Green Onions – I love the taste that the onions bring with the beef flavor. Such a great pairing!

Garlic Powder – If there is any seasoning to use in cooking to make things taste better, garlic is it! Garlic is also very good for supporting the immune system.

Ground Cumin – This gives a nice spicy kick to the taquitos but not too overpowering.

Coconut Aminos – I love adding coconut aminos to my dishes because it adds a nice sweet salty flavor. It’s also a great soy sauce alternative and has less sodium!

Grain Free Tortillas – You can use whatever brand you like best but in this recipe I used Mikey’s Purple Carrot and Cauliflower ones. They hold together pretty well and give a vibrant color pop!

Dairy Free Queso – There are a few brands out there that are dairy free but my favorite brand is Siete Foods.

Zucchini – I love air fried zucchini as a side dish paining with the taquitos.

Citrus Herb Seasoning – I used the citrus herb seasoning from the brand The New Primal.(You can use my discount code “CSF15” to get 15% off their products.)

Avocados – I am obsessed with avocados and they are one of my favorite things to add with a meal. They are rich in healthy fats and fiber which keeps you feeling full longer!

How to make the taquitos

  1. Preheat your air fryer to 390 degrees. In a bowl mix together your chopped zucchini, Avocado oil, citrus herb seasoning, and salt. Coat evenly and add to the air fryer basket. Set timer for 15 mins.
  2. While the zucchini is cooking, cook your hamburger and green onions in a pan on the stove over medium heat. Right before the hamburger is completely browned, add in the garlic powder, cumin, and coconut aminos.
  3. Set your hamburger mixture aside once done cooking. When your zuchinni is done in the air fryer, take them out and set aside.
  4. Take a few thawed tortillas and spoon some seasoned beef mixture into them. Roll them up carefully and place in the air fryer and cook for about 3-5 mins or until slightly golden crisp.
  5. Heat up some queso for dipping and add some avocado to your plate along with the zucchini and taquitos and enjoy! 

What if I don’t have an air fryer?

Don’t fret if you don’t have an air fryer! You can make these taquitos in a pan on the stove as well! Just cook them over medium heat for a couple minutes on each side or until slightly crisp!

  • 1 Air Fryer

Ingredients
  

  • 1 lb ground grass-fed hamburger
  • 1 bunch green onions
  • 1/2 tsp garlic powder
  • 1/2 tsp ground cumin
  • 2 tbsp coconut aminos
  • 6-8 grain free tortillias*
  • Dairy free queso**
  • 2 zucchini chopped
  • 4 tsp avocado oil
  • 1 tbsp Citrus herb seasoning***
  • 1/4 tsp Himalayan salt
  • 2-3 avocados cut into slices

Instructions

*The tortillas I used in this recipe are Mikey’s grain free purple carrot and cauliflower tortillas. They have such a fun color pop!
