Chocolate Raspberry Pistachio Yogurt Bark
This Chocolate Raspberry Pistachio Yogurt Bark has been an all-time hit for those mornings when you want something cool, sweet, and savory with the balance of fruit, nuts & most essential – chocolate! Enjoy this treat as a snack or breakfast while you load up on antioxidants, superfoods, and help fuel your body for the day ahead! This recipe is also dairy, grain, gluten, and refined sugar free.

What you will need for this recipe
Yogurt – I use a dairy free plain yogurt in this recipe but you could always use regular dairy yogurt if you can handle it! I used the brand Kite Hill.
Raspberries – You can use fresh or frozen, but I prefer fresh! Raspberries are a great source of fiber and antioxidants. Raspberries are also very low in sugar which makes them an optimal fruit for those on a low sugar diet!
Vanilla Protein Powder – I like to use a plant based protein powder made with minimal ingredients but you can sub for your favorite protein powder.
Cashew Butter – Make sure to use a raw cashew butter which has a mild sweet flavor. You can also substitute with raw almond butter.
Honey – I like using honey because it tastes great, but you could also use maple syrup or monk fruit(a healthier sugar free alternative.)
Chocolate – You can never go wrong with chocolate! My favorite brand is Hu Kitchen because it is made with clean ingredients and they have paleo/vegan options!
Pistachios – This nut is one of my absolute favorites and is rich in fiber, minerals, and protein! It’s a nice addition to this yogurt bark.


How to make the chocolate raspberry pistachio yogurt bark
- First, in a blender or food processor, add the yogurt, raspberries, nut butter, honey, and vanilla protein powder. blend until smooth and there are no clumps.
- Pour the yogurt mixture over a parchment paper lined sheet pan and spread out evenly using a spatula.
- Melt the chocolate and drizzle over the yogurt mixture. Use a toothpick or straw to make swirls of the chocolate in the yogurt.(It looks so pretty!)
- Add the chopped pistachios and some fresh raspberries on top of the yogurt and then place pan in the freezer for at least 2 hours to set.
- Take pan out of the freezer and carefully chop your frozen yogurt into pieces.
- Store in the freezer and when ready to enjoy let sit at room temp for a couple of minutes before eating.
Tips and storage
You can store the yogurt bark in the freezer for up to a couple months. For best enjoyment, let them thaw out for a couple minutes before eating!
