Chocolate Cherry Cheesecake Parfaits

This recipe is perfect for when you are craving something sweet, but also want something that is nutrient dense and contains some protein! I highly recommend making this chocolate cherry cheesecake parfait recipe! It consists of a GF chocolate cookie crust, a creamy cherry yogurt “cheesecake” layer, cherry puree, and topped with delicious dairy free whip cream! They a delightful healthier dessert option to enjoy and share. Cherries are one of the best summer fruits and are packed with many antioxidants which is always a plus!

What you will need

Dairy Free Yogurt – I love to use the cherry or vanilla coconut based yogurt by Culina. I love this brand because it is made with simple clean ingredients and only uses a little maple syrup to sweeten.

Red Cherries – Make sure to get red cherries that are firm and shiny! Cherries have been shown to help fight inflammation, support soothing sore muscles, and are packs with antioxidants.

GF Chocolate Cookies – I love using the cacao cashew cream sandwich cookies by Simple Mills.

Vanilla Protein Powder – One of my absolute favorite protein powder to use is by the brand Truvani. It is organic and made with only 6 simple ingredients! It really does taste like cheesecake when you mix it with yogurt!

Dairy Free Whip Cream – This is optional but I think whip cream is always a great idea!

How to make the chocolate cherry cheesecake parfaits

Take the pits out of 3 cups of red cherries. Add the cherries to a food processor. Process until a smooth cherry puree forms.

Next, In a bowl mix together the dairy free yogurt, vanilla protein powder, and 4-6 tbsp cherry puree and then set aside.

In a food processor, add chocolate sandwich cookies and process until a crumble consistency.

In 3 glass jars or cups, add some cookie crumble mixture to the bottom of each glass. Then add layers of the cherry protein yogurt cheesecake with the rest of the cherry puree.

Top with more cookie crumbles and some whip cream wen ready to serve. Enjoy!

Ingredients

  • 4 tbsp vanilla protein powder
  • Dairy free whip cream
