Caramel Apple Magic Cookies

I’ve always enjoyed making various versions of apple cookies over the years. However, this caramel apple version is probably my absolute favorite! It’s made with a delicious “magical” topping mixture that is made from real food ingredients! They have a drizzle of caramel and chocolate, which really takes these cookies to the next level! Everyone needs these because they are LIFE CHANGING! These caramel apple magic cookies are made with 7 simple clean ingredients that you and your whole family will enjoy.

What you will need

Apples – You can use any type of apple, but my personal favorite is honey crisp!

Shredded Coconut – Coconut is a great source of fiber and healthy fats! I love how it adds a fun texture to these cookies as well.

Almond Butter This ingredient holds the topping mixture together and also tastes delicious! You can also substitute with cashew, peanut, or sun butter.

Maple Syrup – This is what we will use to sweeten the topping mixture.

Chocolate Chips – I use dairy and refined sugar free chocolate, but you can use any kind you prefer.

Cinnamon – This adds a touch of warming spice flavor to the apple cookies.

Vegan Caramel – You can use store bought or my homemade recipe!

How to make the caramel apple magic cookies

1) Cut the apples into 1/2 inch thick rounds. Use a knife or circle cut out for taking the core part out.

2) In a bowl, mix together the almond butter, shredded coconut, chocolate chips, maple syrup, and cinnamon.

3) Top all the apple slices with the mixture and place on a parchment paper lined sheet pan.

4) Melt some chocolate chips and then drizzle over the apple cookies.

5) Drizzle some caramel over top the apple cookies as well and then place in the fridge for a few minutes to set.

6) Store in the fridge and enjoy as a snack or healthy dessert!

My homemade caramel recipe

You will need 1 cup coconut cream(from the can and no liquid), 1/2 cup coconut sugar, and 1 tsp vanilla extract. In sauce pan over medium heat, add the coconut cream and coconut sugar and bring to a boil. Turn the heat down to low and let it simmer for about 20-25 minutes while stirring frequently. It will thicken and turn a darker brown color. At the end of it simmering, add the vanilla extract. Take the caramel off the stove and set aside too cool for an hour.
