No Bake Berry Tart
I love the time of year when berries are in season! They can be used in so many delicious recipes like this No Bake Berry Tart, which has an incredible flavor and is almost too pretty to eat! This recipe requires no baking and consists of simple, healthier ingredients that are dairy gluten and refined sugar free. This berry tart will make a fantastic Spring or Summer dessert to share with friends or family.

What you will need
Raw Cashews – Soaking raw cashews and then blending them makes for a super creamy base for dairy free cheesecakes! This also helps to firm up the texture with the other ingredients. I don’t recommend substituting with any other nut.
DF Cream Cheese – I love using the brand Kite Hill. It’s an almond based cream chees and taste so close to the real thing!
Blueberries – We will blend some blueberries in the tart filling to give it a nice berry flavor and pretty color. I recommend using thawed frozen blueberries because they will have more of a dark blue juice to color.
Maple Syrup – This is what I prefer to use to sweeten the tart filling but you can substitute with honey as well.
Coconut Cream – This really does add to the creamy texture of the tart filling.
Coconut Oil – This adds so brain supporting healthy fats to the recipe as well as firms up the filling while chilled.
Dates – You will want to use Medjool dates because they are larger and more gooey. Blending dates with nuts or coconut and flour makes for a fantastic no bake crust!
Shredded Coconut – We will be blending up shredded coconut with the dates to create a delicious no bake crust. Be sure to use dried unsweetened coconut shreds.
Coconut Flour – This is what we will use to help bind together the coconut date crust.
Fresh Berries – I love to top this berry tart with fresh strawberries, blueberries, and raspberries.

How to make the no bake berry tart
First, Add the dates to a bowl and pour some hot water over them to soak for a few minutes to soften them up a bit. Drain the water from the dates and pat them dry, and then carefully slice the dates open and take out the pits.
Then, In a food processor, add the dates, shredded coconut, and coconut flour. Process the ingredients until a dough-like consistency forms and then press the mixture into an 8 inch round tart dish.
Next, In a blender or food processor, add the cashews, cream cheese, blueberries, maple syrup, coconut cream, and coconut oil. Blend for a couple minutes on high power until a smooth and creamy consistency forms. Pour the berry tart filling into the tart dish and spread out evenly. Place the berry tart in the fridge to set for 3 hours.
Once the berry tart has set, top with some fresh berries like strawberries, raspberries, and blueberries to add more flavor and a pretty look! Serve the berry tart and enjoy.

Equipment
- 1 8 inch tart dish
- 1 Food Processor
Ingredients
- 1 cup raw cashews(soaked in hot water for an hour)
- 8 oz dairy free cream cheese
- 1/3 cup blueberries
- 1/3 cup maple syrup
- 1/4 cup coconut cream
- 1/4 cup melted coconut oil
- 2 cups pitted dates
- 1 cup unsweetened shredded coconut
- 4 tbsp coconut flour
- Fresh berries for topping and decorating tart
Instructions
- In a food processor, add the dates, shredded coconut, and coconut flour.
- Process the ingredients until a dough-like consistency forms and then press the mixture into an 8 inch round tart dish.
- In a blender or food processor, add the cashews, cream cheese, blueberries, maple syrup, coconut cream, and coconut oil.
- Blend for a couple minutes on high power until a smooth and creamy consistency forms.
- Pour the berry tart filling into the tart dish and spread out evenly. Place the berry tart in the fridge to set for 3 hours.
- When ready to serve, top with fresh berries and enjoy!
