Birthday Cake Donuts

Who doesn’t enjoy a big slice of birthday cake with all the sprinkles? However I took it to the next level by making the iconic cake in donut form! These donuts are dairy, grain, gluten, and refined sugar free! The icing is made with coconut butter which has a naturally sweet taste but hardly any sugar. They are colored with artificial dye free colorings/ superfood powders too.

What you will need

Vanilla Cake Mix – I used a paleo/gluten free mix by Simple Mills but you can choose any brand you like.

Eggs or Egg Alternative – Bob’s Red Mill makes an amazing Egg Replacer that is made with simple clean ingredients if you can’t eat eggs or want a vegan option!

Nut Milk – Almond or Coconut will work.

Maple Syrup – You can substitute with honey or monk fruit if you prefer.

Coconut Oil – I like using coconut oil in sweet recipes because it contains lots of healthy fats. You could sub with avocado oil if you don’t want any coconut flavor. You should try to avoid processed vegetable oils like canola, sunflower, and safflower.

Vanilla Extract – This really brings out that birthday cake flavor!

Coconut Butter – I love using this ingredient and a healthy icing alternative! It’s naturally sweet, low in sugar, and contains healthy fats.

Artificial Dye Free Sprinkles – I never use artificial colorings in my recipes because they have been linked to so many different health issues. One of my favorite sprinkles to use is this one by Color Kitchen.

Artificial Dye Free Food Coloring – One of my favorite brands is Watkins.

How to make the donuts

  1. Preheat your oven to 350 degrees.
  2. With a hand mixer, beat together the wet ingredients first then slowly add the vanilla cake mix. Mix for a couple minutes on medium speed.
  3. Pour donut batter into silicone baking molds and bake for about 20-22 mins.
  4. Once the donuts are done let cool for a while and then stick in the freezer for about an hour.
  5. In a sauce pan on the stove over low heat, melt together the coconut butter and full fat coconut milk. Stir often until well incorporated.
  6. Divide the icing mixture between 4 dishes( Put only 1/8 cup into 2 dishes and the rest evenly in the other 2.) Mix 4 different colors of choice in the coconut butter dishes.
  7. Take your donuts out of the freezer and dip half of them in one main icing color, and the other half in the other color. Set them on a baking rack and let them set for a few minutes.
  8. Drizzle the other 2 colors of icing and add some sprinkles then enjoy!

How to store them

You can store them in the fridge after a couple days and then freeze for a couple months if you aren’t going to eat them within a week.
