Pizza Spaghetti Squash Boats

Stuffed squash has always been one of my favorite go to meals, and these pizza spaghetti squash boats are such a delicious and easy recipe to make! It’s a fun spin on pizza and is low in carbs and high in fiber and protein. It is also a great gluten and dairy free dinner option for those with dietary restrictions. This is definitely a meal the whole family will enjoy!

What you will need

Spaghetti Squash – This squash is so fun to make savory meals with! When cooked, the flesh comes out as noodle like strands which is fun. I also love to use it as spaghetti noodles, or in soups.

Pizza Sauce – I like to use an organic brand but you can really use any pizza sauce or even homemade if you have a recipe!

Dairy Free Cheese – I like to use either a parmesan cheese or ricotta cheese.

Italian Sausage – I love Italian sausage on my pizza and it adds so much flavor to this meal! You can use either pork or turkey sausage.

Black Olives – This is one of my favorite pizza toppings but you can omit if you don’t like olives.

Italian Seasoning – This is what is used to make the Italian turkey meat. This seasoning I usually a blend of oregano, Marjoram, thyme, rosemary, basil, and sage.

Pepperoni Slices – I love to use turkey pepperoni slices personally. I make sure to use brands that don’t use added hormones or nitrates. Applegate is a great brand or Niman Ranch!

Fresh Basil – There’s just something so wonderful about fresh basil on a pizza! If you’ve never tried it, you’re missing out!

Avocado Oil – I use this oil to coat the spaghetti with for baking. Avocado oil is a great oil for high temperatures because it has a high smoke point.

How to make the pizza stuffed spaghetti squash

First, preheat your oven to 400 degrees. Carefully cut the 3 spaghetti squash in half long ways. De-seed the squash and place on a parchment paper lined baking sheet. Coat the inside in the squash with the avocado oil and then place the squash skin side up. Bake the spaghetti squash for 35-40 minutes then take out of the oven.

While squash is baking, cook the Italian sausage in in pan on the stove over medium heat. In a bowl, mix together the pizza sauce, olives, Italian seasoning, half of the cooked Italian sausage, and pepperoni slices(cut the pepperoni slices in quarters.) Distribute the pizza sauce and meat filling to each of the spaghetti squash halves. Top them with 1/4 cup dairy free parmesan or ricotta cheese, the remaining Italian sausage, a few olives, and a few pepperoni slices.

Place the squash back in the oven and bake for an additional 10-15 mins or until the cheese starts to brown. Take the squash out and let cool for a few minutes before enjoying.

Can I add other toppings?

You can absolutely change the recipe topping to your liking! You can add olives, mushrooms, other veggies, just cheese and no meat, and dare I say.. pineapple! The topping possibilities are endless really and all depends on the individual.

Ingredients
  

  • 3 medium size spaghetti squash

  • 1 1/2 cups dairy free parmesan or ricotta cheese
  • 1 lb Italian sausage or ground turkey
  • 1 tbsp Italian seasoning
  • 1/2 cup pepperoni slices plus a few more for topping
  • 3 tbsp avocado oil
  • A few fresh basil leaves chopped
  • 1 cup sliced black olives

Instructions

  • Use a fork to "fluff" up the spaghetti squash forming the long noodles.
  • Distribute the pizza sauce and meat filling to each of the spaghetti squash halves. Top them with 1/4 cup dairy free parmesan or ricotta cheese, the remaining Italian sausage, a few olives, and a few pepperoni slices.
  • Place the squash back in the oven and bake for an additional 10-15 mins or until the cheese starts to brown.
  • Take the squash out and let cool for a few minutes before enjoying.
