Gingerbread Truffles


Gingerbread is by far my favorite holiday flavor! I love the warming spices with the delicious molasses flavor. These decadent Gingerbread Truffles are definitely next level! They have a gooey gingerbread cookie dough filling dipped in a rich dark chocolate topped with cookie crumbs. They are also dairy, grain, gluten, and refined sugar free! Need I say more? Grab all the ingredients and make these truffles asap!

Are these truffles healthy?

Compared to most store bought truffles, these gingerbread truffles are much healthier! I prefer my treats to be refined sugar free so I use maple syrup and molasses to sweeten. Heavily processed sugars can cause a lot of inflammation in the body and cause blood sugar imbalances. You can also make them very low in natural sugar by swapping monk fruit instead of maple syrup!

These truffles are also free of dairy, gluten, and other grains which can be inflammatory especially if you have an auto-immune disorder. I use a stevia sweetened dark chocolate that is dairy free, and the filling uses nutrient dense grain free flours such as almond and coconut.

These truffles contain healthy fats from cashew butter and coconut oil which make these truffles more blood sugar balancing and satisfying. Coconut oil especially contains brain boosting fats as well as supports a healthy microbiome.

What you will need

Molasses – I use a blackstrap molasses which is a by product of sugar production. Unlike refined sugar it is very nutritious! It’s rich in iron, magnesium, potassium, and vitamin B6. It has been shown to support bone health and alleviate constipation.

Raw Cashew Butter – Using a creamy nut butter like raw cashew butter helps give the gingerbread truffle filling a cookie dough like texture. Cashews are also a great source of protein and healthy fats!

Maple Syrup – This is my preferred sweetener for this recipe but you can substitute with coconut sugar or even monk fruit for a low sugar option.

Coconut Oil – This is a great oil for spreading the melted chocolate thinner for rolling the truffles in. It is also a great healthy fat.

Almond Flour – This is a healthier gluten free flour alternative that is high in fiber and protein.

Coconut Flour – This is also a great gluten free flour that is rich in fiber and protein! It will make you feel fuller longer than most processed flours.

Ginger – This is essential to get the Gingerbread flavor! Ginger is also a great anti-inflammatory food that supports healthy digestion as well.

Cinnamon – You can never go wrong with this warming spice! Ceylon cinnamon is especially high in antioxidants and supports healthy glucose levels.

Clove – This spice is high in antioxidants and also has anti-bacterial properties and may help kill off parasites in the body.

Vanilla Extract – This always gives any dessert and extra flavor boost!

Dark Chocolate Chips – Dark chocolate contains many polyphenols and essential vitamins and minerals. I used stevia sweetened chocolate chips in this recipe but you can substitute with milk chocolate as well if you’d prefer.

Grain Free Cinnamon Cookies – I like the Simple Mills or Siete Foods brand.

How to make the gingerbread truffles

First, in a bowl mix together the molasses, cashew butter, maple syrup, vanilla extract, and 1 tbsp melted coconut oil. mix until well incorporated. Then in a sperate bowl, mix together the almond flour, coconut flour, ginger, cinnamon, and clove.

Combine both the wet and dry ingredients and then stick the bowl in the fridge for 20-30 mins. Take the bowl out and roll truffle filling into 14 balls. Place the gingerbread balls on a parchment paper lined baking sheet and stick in the freezer for 30 mins.

Melt your chocolate chips with 1 tbsp coconut oil either in the microwave or in a double boiler. Take the gingerbread balls out of the freezer and dip each one in the melted chocolate and cover completely. Set them back on the parchment paper lined baking sheet.

Once the chocolate hardens, drizzle the remaining chocolate over the truffles and top with cookie crumbs. Store in the fridge and enjoy with friends or family! (They also make great Christmas gifts.)
