Chocolate Strawberry Pudding Parfaits
You can never go wrong with chocolate and strawberries! This recipe is such a delightful treat and can be enjoyed as a dessert or a filling breakfast treat! It is high in protein and healthy fats that will keep you satiated and feeling great! These chocolate strawberry pudding parfait are also dairy, gluten, and refined sugar free! You can make them for yourself or to share with a loved one!

Unlike most parfait desserts out there, this one is very low in sugar and is only sweetened with maple syrup and a little stevia. The chocolate pudding is loaded with health fats and antioxidants from cacao powder, avocados, and cacao powder. The Creamy strawberry layer is made with a dairy free yogurt which supports a healthy gut! You will definitely feel good and satisfied after enjoying this parfait!
What you will need
Avocados – This creamy fruit is an excellent source of fiber and healthy fats! They also give the chocolate pudding such a creamy texture!
Cacao Powder – This superfood is full of antioxidants and essential vitamins and minerals. It also can help boost serotonin levels and support a happy mood! What’s not to love about cacao?
Nut Milk – I like to use a mix of full fat coconut milk and almond milk.
Maple Syrup – This is a great refined sugar free alternative to sweeten recipes with! You could also substitute with powdered monk fruit for a ow sugar alternative.
Vanilla Extract – This adds a nice sweet note of flavor to the pudding.
Plain Yogurt – I use a dairy free plain yogurt from the brand Kite Hill. You can use a plain dairy yogurt as well if you can eat dairy!
Strawberry Powder – I used a already made strawberry powder, but you can make your own by adding freeze dried strawberries to a food processor.
Vanilla Protein Powder – I always prioritize protein in my meals, snacks, and desserts to make them more blood sugar balanced! I used a collagen protein powder, but you can use your favorite as well or omit.
Fresh Strawberries – Strawberries are rich in vitamin C, which makes them a great food for supporting the immune system. They may also support healthy blood pressure and cholesterol levels. Adding fresh strawberries to these parfaits is a must!
Whip Cream – I say never skip out on the whip cream! I used a dairy free whip cream from the can but you can also use a homemade version.
Cacao Nibs – Adding a little touch of cacao nibs, shaved chocolate or even cookie crumbles gives these parfaits the final perfect touch!

How to make the chocolate strawberry pudding parfaits
First, add the avocado, cacao powder, almond or coconut milk, maple syrup, and vanilla extract to a bowl. Use an immersion blender to blend everything until smooth and creamy. (You can also do this in a food processor.)
Next, make your strawberry yogurt mixture by adding the dairy free yogurt, strawberry powder, and vanilla protein powder to a bowl. Mix together with a whisk until well incorporated.
Cut some strawberries into round thin slices and you can always cute some into small pieces as well to add to the parfait. Then, In 2 glass jars or cups, layer the parfaits by first adding the chocolate avocado pudding, then adding some of the thin round strawberry slices to the inside of the glass, then add the strawberry yogurt.
Top the parfaits with some whip cream and cacao nibs, shaved chocolate, or chocolate cookie crumbles. Enjoy!
