Healthier Almond Joy Bars
Something that definitely brings some JOY into my life are these healthier almond joy bars! They were one of my absolute favorites growing up so I decided to make my own version without all the processed ingredients! They are made with 6 simple clean ingredients and are paleo and vegan friendly! These almond joy bars really do taste like the real thing and maybe even better!

What you will need
Shredded Coconut – This is definitely a must when it comes to almond joys! (It should be called coconut joys since there’s more coconut than almonds ha!) Coconut is a great source of fiber and healthy fats!
Coconut Cream – This is what makes the texture so soft and creamy. I use the full fat coconut cream out of the can which is the best.
Maple Syrup – This is my preferred sweetener of choice. I wouldn’t recommend using a different sweetener because it might not taste the same. I find that maple syrup is the best one to get the authentic almond joy flavor.
Coconut Oil – This is what makes the almond joy filling stay together when chilled.
Chocolate Chips – I like to use either Hu Kitchen Hu Gems or Lily’s semi sweet chocolate chips. Both are dairy and refines sugar free!
Almonds – Obviously we will need some almonds for this recipe! This nut is a great source of fiber, protein, healthy fats, magnesium, and vitamin E. They have also been shown to support bone health and healthy cholesterol levels.
Silicone Bar Mold – Using a silicone bar mold really makes these bars so much easier to make without them falling apart! I’ve linked the one that I love to use.

How to make the healthier almond joy bars
In a food processor, add the shredded coconut, maple syrup, coconut cream, and melted coconut. Process for a couple of minutes until everything is combined well. Scoop coconut mixture unto the silicone bar molds and press down evenly.(You can use an 8×8 baking dish lined with parchment paper too.)


Next, top each coconut bar with a couple almonds(make sure to press them down enough so they stick) and place in the freezer for 1 hour. Take the bar mold or dish out of the freezer and carefully take each coconut bar out of the molds.(You will need to use a knife to cut them if using a baking dish.)


Lastly, melt the chocolate chips in a bow in the microwave in 30-second increments. Dip each coconut bar in the chocolate using a fork and then place it on a parchment paper lined tray. Once the chocolate is set, cut off any access chocolate around the edges. store in an air-tight container and EnJOY!

Equipment

Ingredients
- 3 cups shredded coconut
- 1/2 cup coconut cream
- 2 tbsp melted coconut oil
- 1/3 cup maple syrup
- 1 1/2 cups chocolate chips
- A few almonds
Instructions
- In a food processor, add the shredded coconut, maple syrup, coconut cream, and melted coconut. Process for a couple of minutes until everything is combined well.
- Scoop the coconut mixture into some silicone bar molds and press down evenly.(You can use an 8×8 baking dish lined with parchment paper too.)
- Top each coconut bar with a couple almonds and placed in the freezer for 2 hours.
- Take the bar mold or dish out of the freezer and carefully take each coconut bar out of the molds.(You will need to use a knife to cut them if using a baking dish.)
- Melt the chocolate chips in a bow in the microwave in 30-second increments. Dip each coconut bar in the chocolate using a fork and then place it on a parchment paper lined tray.
- Once the chocolate is set, cut off any access chocolate around the edges. store in an air-tight container and EnJOY!
