Pink Pitaya Chia Pudding Parfait

How gorgeous is this Pink Pitaya Chia Pudding Parfait?! Pink Pitaya(also known as pink dragon fruit) is one of my favorite superfoods not only because of its vibrant color, but because it is so nutrient dense. Pitaya is rich in antioxidants like vitamin C, beta-carotene, and lycopene. It is also supports heart health, immune health, and gut health. This parfait is packed with healthy fats, fiber, and protein which will fuel you morning!

What you will need

Pink Pitaya – Also know as pink dragon fruit, this tropical delight is high in prebiotic fiber which feeds the healthy bacteria called probiotics in the gut. It is also high in antioxidants that support the immune system and detoxification.

Chia Seeds – These tiny seeds gel up about 4x their size when soaked in liquid which is cool! chia seeds are a great source of fiber, protein, and omega 3s.

Nut Milk – I definitely recommend using full fat coconut milk because it makes the chia pudding so creamy!

Vanilla Protein Powder – I like to use a collagen protein powder, but you can use a plant based one as well.

Dairy Free Yogurt – I prefer an unsweetened yogurt to avoid added sugar. One of my new favorites is the brand Cocojune.

Blue Spirulina – This is what makes the yogurt so pretty and vibrant! It’s amazing that nature can be so naturally colorful! Blue spirulina has many health benefits and is rich in phycocyanin which is a powerful antioxidant.

Kiwis – This fruit pairs very well with the pink pitaya and gives a more tropical flavor to the parfait.

Strawberries – This berry is rich in vitamin C and antioxidants that support health. I find that this fruit also pairs well with the pink pitaya.

Granola – I use grain free granola, but you can use any one of your favorite brands!

How to make the pink pitaya chia pudding parfait

First in a blender, blend together the dragon fruit, nut milk, and 1 scoop of vanilla protein powder. Pour into a container and mix in the chia seeds. Let it set for a few hours or overnight.

Then on the morning you are going to enjoy the parfaits, Mix together the yogurt, the remaining protein powder, and blue spirulina. Set the yogurt aside.

Chop up your strawberries and also chop 1 of your kiwis. Cut the 2nd kiwi into thin round slices and carefully stick to the sides of 2 glass cups. This will make the parfait look so pretty!

Divide your yogurt evenly into the bottom of both cups then divide your pitaya chia protein pudding evenly between both cups for a layered look. Top the parfaits with the chopped strawberries, kiwis, and granola. Enjoy!

Ingredients
  

  • 1 cup pink pitaya(dragon fruit) or 1 pink dragon fruit frozen smoothie packet thawed.
  • 1 1/2 cups nut milk
  • 2 cups plain dairy free yogurt
  • 3 scoops vanilla protein(can omit)
  • 1/2 cup chia seeds
  • 1 tsp blue spirulina powder
  • 3-4 kiwis
  • 1 cup chopped strawberries
  • 2/3 cup grain free granola

Instructions
 

  • In a blender, blend together the dragon fruit, nut milk, and 1 scoop of vanilla protein powder. Pour into a container and mix in the chia seeds. Let it set for a few hours or overnight.
  • Mix together the yogurt, the remaining protein powder, and blue spirulina. Set the yogurt aside
  • Cut one of your kiwis into thin round slices and carefully stick to the sides of 2 glass cups. Then divide your yogurt evenly into the bottom of both cups.
  • Next divide your pitaya chia protein pudding evenly between both cups.
  • Cut your other kiwi into small pieces. Top your chia pudding parfaits with the chopped strawberries, kiwis, and granola and enjoy!

Notes

Eat the parfaits within a couple days of making for optimal flavor and freshness.
