Cookies N Cream Coffee Ice Cream

I am so obsessed with all coffee desserts, and this ice cream is next level! I was so excited to finally get a Ninja Creami because I’ve been seeing so many delicious recipes using it. This cookies n cream coffee ice cream recipe is so easy to make, and it’s a lot of fun to add your own mix ins! You would be amazed that it is dairy, grain, gluten, and refined sugar free. Cookies and coffee are definitely a match made in heaven!

What you will need to make the cookies n cream coffee ice cream

Coconut Milk – I always use the full fat coconut milk from the can! This is what makes the ice cream so creamy.

Instant Coffee – For this recipe we will add some instant coffee with a little warm water to really give that string coffee flavor.

Cacao Powder – I always use fair trade organic cacao powder. I love the chocolate coffee combo!

Chocolate Pudding Mix – I use a refined sugar free pudding mix by Simply Delish. (You can use my code “SUPERFOODIE10” for 10% off)

Maple Syrup – This is my preffered sweetener of choice but you can use honey or monk fruit as well!

Nut Milk – After freezing the ice cream, it is help to blend with a little bit of milk to make the texture smooth and creamy instead of icy.

Gluten/Grain Free Cookies – You can use any cookie of your choice! I personally love the Cocoa Cashew Creme Nut Butter Stuffed Sandwich Cookies by Simple Mills. Cookies n cream coffee ice cream is seriously one of the best flavors!

Melted Chocolate – This is optional but I think it makes the ice cream so fun to enjoy!

How to make the cookies n cream coffee ice cream

First, add the coconut milk, instant coffee, cacao powder, pudding mix, and maple syrup to the Ninja ice cream pint. Then using a hand frother or whisk, blend the ingredients well and then place the lid on the container. Freeze for at least 24 hours.

Next, take the ice cream pint out of the freezer and place it in the Ninja Creami container, and attach it to the machine. Push the ice cream button and let it mix. After it has gone through the ice cream cycle, take the pint out and take the lid off. Spoon out the center and add some crumbled sandwich cookies and the nut milk. Place back into the Ninja Creami and push the “Mix In” button, and let it cycle.

When it’s done, it should be a nice creamy consistency. You can scoop into a bowl and add some drizzled melted chocolate and more cookie crumbles.

What if I don’t have a Ninja Creami?

If you don’t have the Ninja Creami ice cream maker, you can probably make this by using a blender instead! I would suggest blending all the ingredients except for the cookies and then adding to a container that can be stored in the freezer.

You will probable need to stir it up every couple hours throughout the day so it will be easier to scoop when its frozen. When you are ready to enjoy the ice cream, scoop it out and place in your blender. Add a little bit of nut milk to make it more creamy along with your cookies.

I have not tested this out myself yet but I have made ice cream in the past like this and it turned out ok!

Equipment

  • 1 Ninja Creami(or blender)

Ingredients
  

  • 1 can full fat coconut milk
  • 1 tbsp instant coffee mixed with 1 tbsp warm water
  • 1/4 cup cacao powder
  • 2 tbsp chocolate pudding mix
  • 2 tbsp maple syrup
  • 2 tbsp nut milk
  • Gluten free/paleo chocolate cream sandwich cookies
  • Melted chocolate(optional)

Instructions
 

  • Add the coconut milk, instant coffee, cacao powder, pudding mix, and maple syrup to the Ninja ice cream pint.
  • Whisk the ingredients well and then place the lid on the container. Freeze for 24 hours.
