Berrylicious Smoothie Bowl

On the mornings where I don’t feel like making an elaborate breakfast but still want to start the day with a nourishing meal, my go to is always a good smoothie or smoothie bowl! It’s so easy to throw ingredients into a blender and add some delicious topping to satisfy and keep me you full for a while. This Berrylicious Smoothie bowl is one of my favorites for sure and I love topping it with yogurt, fresh berries, and some grain free granola!

What you will need

Frozen Berries – I like to use a combination of strawberries and raspberries in this smoothie! You can also add blueberries or blackberries if you’d like.

Frozen Cauliflower Rice – I know you’re probably thinking “why on earth would I add cauliflower to a smoothie?” Well trust me you can’t taste it and it gives the smoothie such a creamy texture and provides more nutrition. 1 cup of cauliflower can provide around 75% of your daily value of vitamin C.

Avocado – I love to add avocados to my smoothie because it provides a healthy fat and lots of fiber that helps keep you fuller for longer.

Banana – This will help sweeten the smoothie a little bit more. You can omit the banana for a low sugar option or use a soft date instead to sweeten.

Vanilla Protein Powder I like to use a plant based vanilla protein powder, but you can use your favorite brand as well.

Nut Milk – I use coconut or almond milk in this smoothie.

Toppings – I love adding DF yogurt, fresh berries, and GF/grain free granola to this smoothie bowl.

How to make the berrylicious smoothie bowl

Add all the ingredients (except for the toppings) into a blender and blend on high for a couple of minutes until a thick creamy consistency forms. Pour the smoothie mixture into a bowl and then add all the toppings and enjoy!

Tips: Blend the smoothie for 2-3 minutes to really get a creamy thick fluffy texture. To keep the smoothie bowl from melting as fast, put the serving bowl in the fridge to chill that way it is cold. Cut and prep your berries and toppings before you blend the smoothie that way you can quickly add them on top of the smoothie bowl to enjoy.

Ingredients
  

  • 1 cup frozen strawberries
  • 1/2 cup frozen raspberries
  • 1 cup frozen cauliflower rice

  • 2/3 cup nut milk
  • 1 scoop vanilla protein powder
