Chocolate Strawberry Cereal Bars
Cereal is always a classic, and enjoying it in bar form is so much fun! I love the combination of the rich chocolate and freeze-dried strawberries with the crunchy strawberry cereal. These chocolate strawberry cereal bars are SO easy to make, and they are a nice snack to have on hand throughout the week! I made these healthier by using refined sugar-free ingredients. These are also dairy and gluten-free.

What you will need
Strawberry Cereal – I am very particular when it comes to cereals on the market. Many cereal contain artificial dyes and flavorings as well as contain pesticide residues. A brand that I know is safe to consume is Love Bird and they make amazing grain free cereals that consist of simple clean ingredients.
Nut Butter – I think raw cashew or almond butter tastes best in this recipe!
Chocolate Chips – I use dairy and refined sugar free chocolate chips but you can use any kind you’d prefer.
Coconut Milk – We will mix the chocolate chips with some full fat coconut milk to make a creamy ganache topping.
Freeze Dried Strawberries – This not only adds more delicious strawberry flavor to the cereal bars, but it makes them look so pretty!
Coconut Oil – We will melt a little coconut oil and mix with the nut butter to help bind the cereal when chilled.


How to make the chocolate strawberry cereal bars
First, add the cereal to a large mixing bowl. Mix together the melted coconut oil and nut butter. Pour the creamy nut butter mixture over the cereal and stir until the cereal is completely coated. Then, add the cereal to an 8×8 dish and spread out evenly, then flatten out the cereal using a spatula.
Next, in a small sauce pan over low medium heat, warm the coconut milk with the chocolate and stir frequently. Stir until the chocolate is completely melted, then take off the stove. Pour the chocolate ganache over the cereal and smooth out using a spatula.
Spread out the freeze-dried strawberries over the chocolate and then place the dish in the fridge for 30 minutes to set. Once the cereal bars have set, take the dish out of the fridge and then carefully cut into 9 cereal bars. Store in an airtight contain and enjoy within 1 week.

- 1 cup raw cashew or almond butter
- 1 tbsp melted coconut oil
- 9 oz dairy free chocolate chips
- 1 cup full fat coconut milk
- 1 cup freeze dried strawberries
Instructions
- Add the cereal to a large mixing bowl.
- Mix together the melted coconut oil and nut butter. Pour the creamy nut butter mixture over the cereal and stir until the cereal is completely coated.
- Add the cereal to an 8×8 dish and spread out evenly, then flatten out the cereal using a spatula.
- In a small sauce pan over low medium heat, warm the coconut milk with the chocolate and stir frequently. Stir until the chocolate is completely melted, then take off the stove.
