White Chocolate Chip Matcha Scones

I am a huge fan of matcha and baking with it is so much fun. These white chocolate chip matcha scones are so delicious and will pair well with your morning matcha of course! They are made with simple, healthier ingredients and are gluten-free, refined sugar-free, and vegan. Trust me you don’t have to be a great baker to make them!

What you will need

GF Baking Flour I like to use the paleo blend by Bob’s Red Mill. You can use any gluten free baking flour though.

Matcha Powder – I love to use premium grade matcha because it has a vibrant green color and more antioxidant properties. The bran I’ve been loving lately is Matcha Nude. (You can use my discount code “COLORFUL_SUPERFOODIE) for 10% off your order.)

Coconut Oil – This is a great healthier oil to use in baking. Coconut oil provide brain boosting fats that support cognitive function.

Maple Syrup – This is my preferred sweetener of choice for these scones. I think honey would taste good too or if you want a low sugar option try granulated monk fruit.

DF Milk – I like to use either almond or coconut milk!

Vanilla Extract – this gives the scones a delicious flavor note.

Baking Powder – This makes the scones rise and have a more airy texture.

DF White Chocolate Chips – I love using the cute mini white chocolate chips by Enjoy Life. They are free from 14 different allergens which s awesome.

How to make the white chocolate chip matcha scones

First, in a bowl, whisk together the baking flour, matcha, and baking powder. Add in the coconut oil, maple syrup, nut milk, and vanilla extract. Mix well, and then fold in the white chocolate chips.

Next, form the scone batter into a 1 1/2 inch thick circle and then cut it into 8 pieces. Place the scones in the fridge for an hour to chill(they will bake better from being cold first.)

Place the scones on a parchment paper lined baking sheet and bake for about 15 minutes at 350 degrees. Let the scones cool down for a few minutes before enjoying.

Store in an air tight container and enjoy within 1 week. You can also place the scones in the freezer for up to 3 months.
