Strawberry Watermelon Lime Sherbet

Something that I always crave on a hot summer day is definitely frozen fruit or some type of frozen dessert. This strawberry watermelon lime sherbet is probably one of my top 5 favorite frozen desserts and it only requires 5 simple ingredients! The difference between sherbet or sorbet is that sherbet has a milk base. In this recipe I used full fat coconut milk for a dairy free version and it turned out very creamy and delicious!

What you will need

Watermelon – A seedless watermelon is the best for this recipe since we are blending it up and don’t want any hard bits.

Strawberries – In this recipe we will use frozen strawberries and you can either freeze your own or buy some from the store(preferably organic.)

Coconut Milk You will need to use full fat coconut from the can to make this sherbet creamy. The other ones are going to be too watered down and will make the sherbet more icy.

Honey – This is the best thing to sweeten the sherbet. You can always omit the honey and enjoy it sweetened by the fruit only.

Lime Juice – Make sure to buy fresh limes to juice for this recipe because that wil ensure the best flavor!

How to make the strawberry watermelon lime sherbet

First, Cut a seedless watermelon into small cubes and place 3 cups worth on a parchment paper lined baking sheet. Freeze for at least 2 hours.

Next, take the watermelon out of the freezer and add it to a food processor. Add the frozen strawberries, honey, coconut milk, and lime juice. Process until a smooth creamy consistency forms.

Then, add the sherbet to a freezer safe storage container or loaf pan and place in the freezer for 30 minutes to an hour to set. Serve up a couple of scoops in your favorite bowl and enjoy!
