Dubai Chocolate Pistachio Ice Cream Bars
I know you all have seen the viral Dubai Chocolate Bar all over social media, but I’ve taken it to a whole new fun level with these Dubai chocolate pistachio ice cream bars. The pistachio ice cream filling is so flavorful and is dairy free as well. I made them gluten-free by using toasted coconut shreds instead of kataifi, which still provides a fun crunchy texture. These may become your new favorite frozen dessert!

What you will need
Pistachio Butter – Make sure to use a creamy raw pistachio butter like the one I linked! This makes the ice cream filling taste so delicious!
Coconut Milk – You will want to use a full fat coconut milk from the can to get the creamiest results!
Honey – This is what I prefer to sweeten the ice cream with but you can substitute with maple syrup as well.
Raw Cashews – To get a really soft dairy free ice cream texture straight out of the freezer, my trick is blending up some cashews into the mixture!
Coconut Shreds – To make these Dubai ice cream bars gluten free, we will use toasted coconut shreds instead of kataifi.
DF Dark Chocolate Chips – I love using the brand Hu Kitchen! They are dairy and refined sugar free with no added junk!
DF White Chocolate Chips – To give these Dubai ice cream bars a pretty look, we will mix some natural green food coloring with some white chocolate and drizzle on the outside of the bars.
Pistachios – I like to use raw pistachios and add a crumble with the white chocolate drizzle. It gives the ice cream bars a fun crunchy texture!
Vanilla Extract – This adds a nice flavor note to the ice cream filling.
Almond Extract – Adding almond extract really enhances the pistachio flavor of the ice cream.
Natural Green Food Coloring – I love using the brand Color Kitchen!

How to make the Dubai Chocolate Pistachio Ice Cream Bars
First, Add the raw cashews, coconut milk, 1/3 cup honey, 1/3 cup pistachio butter, vanilla extract, and almond extract to a high-powered blender. Blend on high for 2 minutes or until smooth and no chunks.


Next, Toast the coconut in a small pan on the stove over low-medium heat. Stir frequently until the coconut turns a light golden color. Mix together the remaining pistachio butter and 1 tbsp honey with the toasted coconut. Then, distribute the coconut mixture evenly in 8 silicone ice cream bar molds.


Pour the pistachio ice cream carefully into each mold and then add a popsicle stick. Place the ice cream bars on a flat surface like a sheet pan and freeze them for 4 hours or overnight. Once the ice cream bars are solid, melt the dark chocolate chips with 1 tsp coconut oil. Add the melted chocolate to a small mason jar or cup for dipping. Dip each ice cream bar into the melted chocolate and place them on a parchment paper lined pan.


Next, melt the white chocolate with 1 tsp coconut oil and mix with some natural green food coloring. Drizzle the white chocolate over top of the ice cream bars and then add the chopped pistachios on top. Store in an air-tight container in the freezer and enjoy!

- 1/3 cup chopped pistachios
