Lemon Ice Cream {DF}
Lemon deserts hit differently during the summer and I thought that creating a lemon ice cream would be a fun, refreshing, frozen treat! I am obsessed with my Ninja Creami ice cream maker and it’s so easy to make this simple 3 ingredient lemon ice cream recipe using it but you can make it without as well. This lemon ice cream is super flavorful and zesty with a touch of sweetness from honey.

What you will need
Coconut Milk – Make sure to use full fat coconut milk from the can to insure the creamiest texture.
Honey – This is the best sweetener in my opinion that pairs well with the lemon flavor. You can substitute with maple syrup as well.
Lemons – For this recipe we will add 2 whole peeled lemons to give the ice cream a real strong lemon flavor.
Natural Yellow Food Coloring – This ingredient is totally optional but will give the ice cream a more vibrant yellow lemon color.

How to make the lemon ice cream
First, carefully cut the peel off of the lemons and cut into slices. Try to deseed the lemons as much as possible. Then, add the lemons to a blender along with the coconut milk and honey. Blend the ice cream mixture until a smooth and creamy consistency forms. Pour the ice cream mixture into a pint container compatible with the Ninja Creami. Freeze the ice cream for 24 hours.
Next, Add the ice cream pint to the Ninja Creamy and hit the “ice cream” function and let it do its thing.(You may need to respin it and add a little more coconut milk if the texture is too crumbly.) Scoop out the ice cream and serve in a bowl, then enjoy!
Note: If you don’t have a Ninja Creami, pour the ice cream mixture into silicone ice cube trays and freeze. Add the ice cubes to a blender or food processor or blender and add a little milk to get a smooth, soft serve texture.

- 1/3 – 1/2 cup honey (or can sub maple syrup)
- 2 lemons
- Natural yellow food coloring(optional)
Instructions

- Pour the ice cream mixture into a pint container compatible with the Ninja Creami. Freeze the ice cream for 24 hours.
- Add the ice cream pint to the Ninja Creamy and hit the "ice cream" function and let it do its thing.(You may need to re-spin it and add a little more coconut milk if the texture is too crumbly.)
- Scoop out the ice cream and serve in a bowl, then enjoy!
