Cherry Amaretto Ice Cream
This Cherry Amaretto Ice Cream is THE ice cream of the season! It’s so creamy and flavorful with cherries and almond extract to give that Amaretto like flavor that is out of this world.. You only need a few simple ingredients and it’s so easy to make! Warning: You may eat the whole pint in one sitting!

What you will need
Red Cherries – I love cherries when they are in season, and they are so nutrient dense! Cherries are rich in antioxidants, support a healthy sleep cycle, and may help reduce inflammation.
Coconut Milk – You will want to make sure to use full fat coconut milk from the can for a creamy consistency.
Honey – This is my preferred sweetener of choice for the ice cream, but you can substitute with maple syrup as well.
Cashew Butter – I love adding a little bit of raw cashew butter to my frozen treats to give it a softer less icy texture.
Almond Extract – This is what will give the ice cream that amaretto like flavor! It pairs so well with the cherries.
Vanilla Extract – This adds a nice flavor note to the ice cream.
Beet Powder – This is optional and it gives the ice cream a more vibrant cherry color.
Xanthan Gum – This adds to the creamy fluffy texture of the ice cream but can also be optional.

How to make the cherry amaretto ice cream
First, carefully take all the pits out of the cherries(I used a cherry pitter tool, which saves so much time!) Then, add all the ingredients to a blender and blend on high for 1 minute until everything is creamy and there are no lumps.
Pour the ice cream mixture into a pint-sized ice cream container compatible with the Ninja Creami.(Or pour into your favorite ice cream maker and follow the instructions.) Freeze the ice cream for 24 hours.
Next, take the ice cream out of the freezer and add to the Ninja Creami, and press the “Ice Cream” function. Take the ice cream out and add a few cherry slices, then put back in the Ninja Creami and press the “Mix Ins” function. Enjoy your ice cream in bowl form or in a cone!
*Note: If you don’t have an ice cream make you can pour the ice cream mixture into ice cube trays and then freeze. Add the ice cream cubes to a blender or food processor with a little milk to create a soft serve ice cream.
