Chicken Fajitas with Cilantro Lime Cauli-rice

I absolutely love making fajitas, and there is just something about cooking in a cast iron skillet that brings out all the flavor! This recipe hits just right when you are in a Mexican food kind of mood. This Fajita Chicken with Cilantro Lime Cauli-rice skillet is definitely a fiesta in your tummy with all the delicious spices, and tangy flavors! They would be perfect for Taco Tuesday or even Cinco De Mayo!

What you will need

Chicken – I think the best chicken that works for fajitas is chicken breasts. I try to always buy organic to make sure the chicken was not fed GMO grains or feed.

Bell Peppers – I love to use a variety of colored peppers for my fajitas.

Red Onion – You can use yellow onion too but I personally love red onion because it has a sweeter taste! Did you know that red onions are rich in quercetin? Quercetin is a flavonoid that supports a healthy inflammatory response in the body and it also supports immune health!

Cauliflower Rice – You can make your own by putting cauliflower in a food processor or you can just use premade! Cauliflower is naturally rich in fiber, B-vitamins, antioxidants, and phytonutrients.

Cilantro – This herb pairs so well with the lime juice for the cauliflower rice! Cilantro is an awesome food for supporting detoxification in the body.

Limes – I love using fresh lime juice but you can always use a bottled juice too if that’s what you have on hand.

Fajita Seasoning – You can use a store bought packet or make your own blend!

Garlic Powder – We will use a little garlic powder to flavor the cauliflower rice.

Coconut Aminos – I love using coconut aminos to bring out a sweet tangy flavor!

Avocado Oil – This is my cooking oil preference because it is great for cooking in high temps. I avoid processed vegetable oils. You could also use grass fed butter or ghee.

How to make the Chicken Fajitas with Cilantro Lime Cauli-rice

First, Heat a cast iron skillet over medium heat on the stovetop. Once the pan is heated, add 2 tbsp of your cooking oil and add the sliced onions and bell peppers. sauté them until tender and a little bit charred. Once cooked set aside.

Next, cut the chicken breasts into small stripes. Add another tbsp cooking oil into the skillet and then place your chicken into the skillet. cook for about 15 minutes or until the chicken is cooked all the way through. Add in the fajita seasoning and coconut aminos and mix for a couple minutes with the chicken. Add the onions and pepper slices back into the skillet. Turn the heat off and set aside.

Then, heat up a pan on the stove over medium heat and add the remaining 2 tbsp of cooking oil. Sautee your cauliflower rice and cilantro until tender. Add the lime juice, garlic powder, and some Himalayan salt to flavor. Serve fajita chicken mixture with the cilantro lime cauliflower rice and enjoy! Can also add to some tortillas of your liking!

  • 1 Cast Iron Skillet

Ingredients
  

  • 2 lbs chicken breasts
  • 2-3 cups Bell peppers
  • 1 medium red onion slices and quartered
  • 4 cups riced cauliflower
  • 1 bunch cilantro
  • Juice of 1-2 limes
  • 1 tsp garlic powder
  • 5 tbsp ghee butter or avocado oil
  • 1 packet fajita seasoning
  • 2 tbsp coconut aminos
  • 1/4 tsp salt

Instructions
