Zucchini Pizza Bites

Zucchini in pizza form is definitely a great way to enjoy all the extra zucchini you have laying around. This recipe is so easy to make and only takes 5 ingredients. It has always been one of my favorites, and is definitely something the whole family can enjoy!!

What you will need

Zucchini – You can use a large zucchini from the garden or a store bought one is fine too. It’s ok if the bites are a little small too.

Pizza Sauce – You can use whatever your favorite pizza sauce is. I used the Muir Glenn brand.

Pepperoni Slices – My personal favorite is turkey pepperoni slices by Applegate but you can use any kind as long as they are small. If you are vegan than you can totally omit this ingredient.

Mozzarella – I am picky when it comes to dairy free cheese alternatives. One of my favorite brands is Miyokos which is cashew based. The texture is very similar to real mozzarella in my opinion and I love how clean the ingredients are!

Black Olives – I love adding olives to my pizza but you can leave these out if they aren’t your favorite!

How to make the zucchini pizza bites

  1. Preheat your oven to 425 degrees
  2. Cut your zucchini into 1/2 inch thick round slices. Place them on a greased parchment paper lined baking sheet.
  3. Top them with your pizza sauce, mozzarella, pepperoni, and olives.
  4. Place the baking sheet in the oven and bake for about 15-20 mins.
  5. Once done, let cool for a few minutes before enjoying!
