Apple Cider Donuts

These Apple Cider Donuts are the perfect fall treat! They are definitely one of my favorites to make, and these ones turned out perfectly moist and fluffy! They are vegan, paleo, gluten free, and refined sugar free! They are made with an apple cider reduction which is the key Ingredient which makes the flavor! 

What you will need

Cassava Flour – This is an excellent gluten free alternative flour to use for baking! It works very similar to how wheat flour does. It is also nut free for those who have nut allergies.

Almond Flour – I like using almond flour mixed with other gluten free flours like cassava and coconut. It adds a nice fluffy texture and isn’t as grainy. Almond flour is also a great source of antioxidants like vitamin E and other essential vitamins and minerals.

Coconut Sugar -You can substitute with maple syrup or granulated monk fruit for low sugar.

Apple Cider – In this recipe I make an apple cider reduction which really concentrates the flavor and makes all the difference in these donuts!

Eggs or Flax Eggs – I use an egg replacer by Bob’s Red Mill that works great!

Nut Milk – I use coconut or almond milk but you can use whatever milk alternative you prefer.

Cinnamon – This not only adds a nice warming flavor but cinnamon is also great for supporting healthy blood sugar levels especially Ceylon cinnamon.

All Spice – This spice is a nice blend to add to your bakes fall goodies.

Baking Soda – This mixed with the baking powder helps it rise.

Baking Powder – This mixed with the baking soda give it a nice fluffy texture.

Apple Cider Vinegar – This also helps with the texture and supports digestion.

How do you make an apple cider reduction?

It is really simple to make an apple cider reduction! All you have to do is bring your apple cider to a boil and then turn the heat to low medium and simmer for a while until the liquid has to reduced down to about 1/3 or 1/4 of the original amount. In this recipe I use 2 cups of apple cider and reduce it down to 1/2 a cup.

Can I just use regular apple cider instead of the reduction?

I definitely recommend using a reduction and not just regular apple cider because the flavor is concentrated. The donuts wouldn’t have much of the apple cider flavor without the reduction.

How to make the donuts

  1. In a small sauce pan on the stove over medium heat, bring your 2 cups apple cider to a boil and then simmer for about 20 mins or until it reduces down to half a cup. (Stir occasionally throughout the process.) Let it cool for a few minutes.
  2. Preheat your oven to 350 degrees.
  3. Mix your wet and dry donut batter ingredients separately then together including the apple cider reduction.
  4. Add batter to a plastic bag or frosting bag and squeeze batter into 9 silicone donut molds.
  5. Bake then for 20 mins. When they are done let them cool completely
  6.  Mix together your monk fruit and cinnamon for the donut coating. Dip each donut in the cinnamon sugar mixture. Enjoy with a cup of chai or coffee!

Ingredients
  

  • 1 cup cassava flour
  • 1 cup almond flour
  • 1/2 cup coconut sugar
  • 1/2 cup apple cider reduction( 2 cups apple cider reduced down)
  • 1/2 cup nut milk
  • 2 eggs or egg replacer
  • 1 tsp cinnamon
  • 1 tsp allspice
  • 1 tsp apple cider vinegar
  • 1 tsp baking soda
  • 1 tsp baking powder

For the cinnamon "sugar" coating

  • 1/3 cup granulated monk fruit
  • 1 tsp cinnamon

Instructions
