Pomegranate Pistachio Chocolate Cups
These Pomegranate Pistachio Chocolate Cups are the perfect quick and easy treat to make for the holidays! They are made with only 4 clean ingredients and are packed with antioxidants! The flavor combo is so much fun and also looks so pretty! They are definitely fun little bites to share with friends and family.

What you will need
Chocolate Chips – You can use your favorite chocolate, but I like to use dairy and refined sugar free ones.
Pistachio Butter – This is probably one of the best nut butters out there and it is underrated in my opinion! I use the organic one by the brand Wilderness Poets.
Pistachios – This nut is packed with protein, fiber and essential minerals! I love eating the lightly salted roasted ones because they are already out of the shell. You can use raw if you prefer!
Pomegranate Seeds – This cute little gems are packed with antioxidants that supporting the bodies ability to fight free radicals. They also support a healthy inflammatory response in the body as well as heart health due to the polyphenolic compounds found in them.

How to make the pomegranate pistachio chocolate cups
First, melt the chocolate chips in a double boiler or in the microwave in 30-second increments. Then, once the chocolate is melted, add a couple of spoonfuls to 12 silicone muffin cups.


Tilt the cups around to coat the inside of the muffin cups with the chocolate. Place the cups in the fridge for a few minutes to set. Once the chocolate has hardened, take the cups out of the fridge and add some pistachio butter to the center of each cup(about 1 tbsp)


Next, divide the remaining chocolate among the muffins cups, coating the pistachio butter. Chop the pistachios and add them to the top of the chocolate cups along with the pomegranate gems. Place the cups back in the fridge for at least 15 minutes to set. Store in the fridge and enjoy throughout the week!
