Carrot Cake Bliss Balls

Carrot Cake is one of my absolute FAVORITES especially during spring time! I also love having delicious healthy snacks on hand, so I made these Carrot Cake Bliss Balls to satisfy. They are made with real food ingredients and are only sweetened with dates! They contain lots of fiber, healthy fats, and protein to fuel your day!

Are these carrot cake bliss balls healthy?

These bliss balls are packed with nutrients and have no added sugar! They are only sweetened with dates which provide lots of fiber and essential vitamins and minerals.

They contain healthy fats from pecans and almond butter which helps support a healthy blood sugar balance.

Carrots are an excellent source of lutein, vitamin A, and vitamin C. All of these support eye health as well as healthy glowing skin!

These bliss balls contain cinnamon and ginger which are high in anti-inflammatory properties.

What you will need

Carrots – You will need a medium size carrot for shredding.

Dates – I love to get Medjool dates because they are a bit larger and taste the best in my opinion.

Pecans – This nut is a great source of potassium, calcium, and magnesium. They may promote healthy blood pressure levels and cholesterol. You can substitute with walnuts if you can’t have pecans.

Almond Butter – I like to use almond butter in the recipe, but you can also use raw cashew or pecan butter!

Shredded Coconut – Coconut is high in fiber and healthy fats which makes you feel fuller longer. I like to get the unsweetened shredded kind.

Cinnamon – This spice not only provides a wonder flavor, but also support healthy blood sugar levels and a healthy inflammatory response in the body. Ceylon cinnamon is the one I prefer because it has more of the medicinal properties.

Ground Ginger – This spice is great for healthy digestion!

Vanilla Extract – This adds a nice flavor to the bliss balls!

How to make the carrot cake bliss balls

First, place the dates and pecans in separate bowls and them cover with hot water and let them set for 1 hour. (This will help them to soften which is better for blending!) Drain the water and pat the dates and pecans dry in a towel to get the excess water. Grate the carrot into shreds and then squeeze in a paper towel or nut milk bag to get the excess water out.

Next, add the pecans, dates, and shredded carrot, and the remaining ingredients in a food processor and process until a dough like consistency. (This takes a couple minutes of processing.)

Take the mixture out of the food processor and roll into about 15 balls. Add some more shredded coconut to a bowl and roll the balls until they are coated with the coconut.  Store in the fridge and enjoy throughout the week!

Ingredients
  

  • 1 1/2 cups pitted Medjool dates(about 15 dates)
  • 1 cup raw pecans
  • 1/2 cup shredded coconut(plus more for rolling)
  • 1 medium carrot
  • 1/2 cup almond butter
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger

Instructions
