Cosmic Brownie Stuffed Dates

If you’re looking for a delicious, easy to make treat for the week you have got to try these Cosmic Brownie Stuffed Dates! Dates are rich in fiber and antioxidants, which makes them an excellent healthier option for a sweet treat! I love stuffing dates with a homemade gluten-free brownie batter and dipping them in some melted chocolate. You can’t forget the sprinkles either because they make these stuffed dates way more enjoyable. If you have kids, they would love these as well!

What you will need

Dates – My favorite kind of dates are Medjool because they are bigger and perfect for stuffing! They are also a great source of fiber and nutrients.

Chocolate Chips – I love the dairy and refined sugar free Hu Gems by Hu Kitchen!

Rainbow Sprinkles – You can’t have a cosmic brownie treat without some fun rainbow sprinkles! I always make sure to use one’s that aren’t made with any artificial dyes or flavors.

Almond Flour – This is a great gluten free flour alternative that is high in fiber and protein. You could substitute the almond flour for cassava flour instead if you can’t eat almonds!

Coconut Oil – Melting the chocolate chips with a little coconut oil help thin out the chocolate a bit and makes it better for dipping.

Almond Butter – This is what makes the brownie batter so gooey! You can also use cashew butter instead if you prefer.

Cacao Powder – I use an organic fair trade certified cocoa powder! Did you know that cacao is rich in antioxidants and essential minerals like magnesium, potassium, iron, and selenium? What’s not to love about cacao!

Maple Syrup – I like to sweeten the brownie batter with this ingredient, but you can use honey or monk fruit instead.

Nut Milk – Almond or coconut milk works great!

Vanilla Extract – Adding a touch of vanilla makes such an impact on the flavor of the brownie batter.

How to make the cosmic brownie stuffed dates

First, pit all of the Medjool dates and then set them aside. Next, make the brownie batter by mixing together the almond flour, almond or cashew butter, cacao powder, maple syrup, vanilla extract, and nut milk in a bowl.

Stuff each date with some of the brownie batter using a spoon. Melt the chocolate chips with the coconut oil in 30 second increments or in a double boiler. Dip each date in the melted chocolate and place on a parchment paper lined sheet pan. Add some rainbow sprinkles to each date and set the pan in the fridge for 15 minutes to set.

Store in the fridge and enjoy!

  • 15-20 Medjool dates
  • 1 1/2 cups chocolate chips
  • Natural rainbow sprinkles
  • 1 tbsp coconut oil

For the Edible Brownie Batter

  • 1/2 cup almond flour
  • 3 tbsp creamy almond or cashew butter
  • 1 tbsp cacao powder
  • 1 tbsp maple syrup or monk fruit
  • 1 tbsp nut milk
  • 1/2 tsp vanilla extract

Instructions
