Green Goddess Pasta

This Green Goddess Pasta is such a fabulous dish to make for Spring because it’s light and fresh with delicious herby flavors! If you’re trying to find more fun ways to get more greens in your diet, then I highly recommend trying out this recipe. I use gluten free rotini pasta but you can substitute with your favorite pasta of choice which makes this dish customizable!

What you will need

Gluten Free Rotini Pasta – I love rotini pasta because it is such a fun shape and the sauce sticks so nicely to it!

DF Ricotta – I love using the dairy free ricotta by the brand Kite Hill.

Greens – We will use a combination of parsley, basil, spinach, and green onions for the delicious green goddess sauce.

Garlic – Adding some fresh garlic to the sauce adds such a great flavor! If you have a hard time with raw garlic, try roasting it first.

Olive Oil – This will be part of the base and adds some healthy fats!

Lemon Juice – This adds such a tangy zesty flavor to the green goddess sauce.

Salt – All you need is just a pinch of salt to balance out the flavor of the sauce.

DF Parmesan – This is for topping the pasta with and I highly recommend.

How to make the green goddess pasta

Cook the Pasta

First in a large pot on the stove, heat up about 4 quarts of water with some salt and bring to a boil. Once the water is boiling, add the pasta and cook for about 7-10 minutes(or go by the instructions of your pasta).

Make the Green Goddess Sauce

While the pasta is cooking, add the ricotta, parsley, spinach, basil, green onions, lemon juice, olive oil, garlic, and salt to a blender. Blend the ingredients until a smooth creamy sauce consistency forms and then set aside.

Assemble the Pasta

Once the pasta is done cooking, drain the pasta into a strainer.(Don’t rinse the pasta if you want the sauce to stick better.) Add the pasta to a bowl and then pour the green goddess sauce over top. Mix the pasta and the green goddess sauce until the pasta is evenly coated.

Serve the Pasta

Add the green goddess pasta to some bowls and serve with some parmesan and fresh herbs on top. Enjoy it as a side dish or add some chicken or other protein to make it a complete meal!

  • 3 cloves of garlic
  • 1/2 tsp salt
  • Dairy free parmesan for topping
