Spicy Asian Cucumber Avocado Salad

Coming in HOT with this fabulous Spicy Asian Cucumber Avocado Salad! I don’t know about you, but I love cucumber avocado salads! This recipe is tangy, zesty, and a little bit spicy. It’s perfect for those who don’t like typical leafy green salads but still want to get in those veggies! This salad is packed with fiber, protein, and healthy fats that will help keep you satiated longer. Trust me, you will not regret making this recipe over the summer!

What you will need

Cucumbers – I prefer to use Persian cucumbers because they are smaller and so crisp and flavorful! You can also use English cucumbers which are basically the larger more commonly found version.

Avocados – I love adding avocados to my salads because they are rich in fiber and healthy fats! They make the texture of this salad more creamy as well.

Green Onions – This adds such a nice flavor to this salad and I definitely don’t skip out on!

Coconut Aminos – For the sauce we will use some coconut aminos for a sweet and salty Asian flavor. You can use soy sauce as well if you prefer.

Rice Vinegar – This adds a nice tangy flavor to the sauce.

Toasted Sesame Oil – I love that slightly toasty sesame flavor in a lot of my Asian inspired sauces.

Chili Crunch – This is what makes this salad a bit on the spicy side! You can control how much you put in the salad depending on your spice tolerance.

Garlic Powder – This adds a great savory flavor to the sauce because garlic belongs in almost every savory dish in my opinion!

Coconut Sugar – This will add a touch more sweetness to the salad sauce.

Salt – If you want the salad to taste a bit more salty you can add some Himalayan or sea salt.

Sesame Seeds – The perfect garnish to any Asian cucumber salad is definitely sesame seeds!

How to make the spicy Asian cucumber avocado salad

Slice and Chop the Ingredients

First, carefully slice the cucumbers very thinly(using a mandolin usually works best). Then add the sliced cucumbers to a bowl. Then carefully slice the avocados into small chunks as well as the green onions, then add to the bowl with the cucumbers.

Make the Marinade Sauce

Make the marinade sauce by combining the coconut aminos, rice vinegar, toasted sesame oil, chili crunch, garlic powder, coconut sugar, and salt in a small bowl. Whisk the sauce ingredients well and then pour over the cucumber slices, avocado, and green onions.

Mix Up the Salad

Toss the salad until everything is coated evenly with the marinade. To get the best flavor, let the salad set in the fridge for a couple hours before enjoying to let all the flavors soak in. When ready to enjoy, top with some sesame seeds for a pretty garnish along with more chili crunch if desired.
