Mediterranean Chickpea Salad

If you think salads are boring, or you are looking to mix up your salad routine, then I highly recommend trying out this Mediterranean Chickpea Salad! It is packed with a rainbow of tasty veggies that will make you feel full and satiated. It also has a fabulous lemon vinaigrette dressing that pairs perfectly! The flavor combo is so delicious, and it is packed with so many nutrients to fuel your body.

What you will need

Chickpeas – Also known as garbanzo beans, this bean is packed with fiber and protein that will make you feel fuller longer.

Tomatoes – You can use any type of tomato, however I recommend using cherry or grape tomatoes because they are sweeter and more flavorful!

Red Onion – This type of onion is my favorite because it is a sweeter tasting one. Red Onions are also known to support a healthy immune system due to it’s antioxidants like quercetin.

Kalamata Olives – This provides a tangy salty flavor to this salad. You can also use regular black olives if you prefer.

Cucumber – You can use a regular one or Persian cucumbers which are my favorite!

Dairy Free Feta – A really great brand of dairy free feta cheese that I like is Violife. It is made with pretty simple clean ingredients

Olive Oil – This is what we will use for the base of the lemon vinaigrette dressing. Olive oil is a great source of healthy fats.

Lemon Juice – You can use fresh squeezed lemon juice or bottled.

Red Wine Vinegar – This is one of the best types of vinegars for dressings, and is a bit more mild than balsamic.

Spices – We will be using garlic powder, oregano, and some Himalayan salt to flavor the dressing.

How to make the Mediterranean Chickpea Salad

First, make sure to wash all the veggies very well. Chop them up into small pieces then place them into a large salad bowl along with the feta. Also be sure to drain and rinse off the chickpeas than add them in the bowl with the other ingredients.

Then, to make the lemon vinaigrette, whisk together the olive oil, red wine vinegar, lemon juice, garlic powder, oregano, basil, and salt in a bowl.

When you are ready to enjoy the salad, drizzle the vinaigrette over top and mix everything together well. Enjoy this salad as a side or make it a meal and add more protein like chicken or salmon!

Ingredients
  

  • 1 16oz can of chickpeas
  • 1 cup chopped red onion
  • 2/3 cup Kalamata olives
  • 1 large cucumber chopped
  • 1 1/2 cups grape tomatoes sliced
  • 1 cup dairy free feta

For the Lemon Vinaigrette

  • 1/3 cup olive oil
  • 3 tbsp red wine vinegar
  • 2 tbsp lemon juice
  • 1/2 tsp garlic powder
  • 1/2 tsp dried basil
  • 1/4 tsp dried oregano
  • 1/8 tsp salt

Instructions
 

  • Wash all the veggies and chop them up then place them into a large salad bowl along with the feta. (Also drain and rinse off the chickpeas).
  • Make the lemon Vinaigrette by whisking together the olive oil, red wine vinegar, lemon juice, garlic powder, basil, oregano, and salt.
  • Mix together all the salad ingredients, and add the dressing when ready to serve.
  • Enjoy throughout the week as a meal prep or share with friends/family at a summer get-together.

*You can add some grilled chicken for some extra protein!
