Viral Cucumber Sweet Pepper Salad

When I saw this viral cucumber sweet pepper salad from a few people on Instagram, I had to give it a try because it looked too good to pass up! I 10/10 recommend this salad because it is definitely worth all the hype! It’s really simple to make and a great way to mix up your salad routine. The flavor combo is the perfect balance of sweet, spicy, and tangy! It pairs so well with the sesame ginger cashew dressing as well! You will definitely enjoy this salad recipe If you enjoy raw veggies and a little bit of spice.

What you will need

Cucumbers – the original recipe calls for Persian cucumbers, but I just used regular ones! Cucumbers are an amazing veggie to add to your diet during the warm summer months because it is very hydrating! They are mostly made up of water and have anti-inflammatory properties.

Mini Sweet Peppers – These cute little colorful peppers are packed with flavor and nutrients! Peppers are a great source of vitamin C, vitamin B6, manganese, and iron. Peppers are also a great source of dietary fiber!

Sesame Ginger Dressing – You could use store bought or a homemade version. I actually used a sesame ginger dressing that I had on hand by Primal Kitchen.

Coconut Aminos – This gives the sesame ginger cashew dressing an umami like flavor.

Cashew Butter – I like to use a roasted cashew butter for a delicious Asian style dressing.

Everything but the Bagel Seasoning – This really is the seasoning that goes with almost EVERYTHING! It pairs so well with all the flavors of this salad.

Chili Crunch – I was new to this ingredient as well, so don’t feel bad if you have never heard of it! There is a brand called Momofuku that makes it. I just made my own version by mixing 1 tbsp red chili flakes, 1/4 cup avocado oil, 1 tbsp maple syrup, 2 tsp coconut aminos, and 1 tsp garlic powder.

How to make the viral cucumber sweet pepper salad

First, carefully cut and slice the mini sweet peppers and cucumbers, then add them to a bowl. Then, in a small blender or food processor, add the sesame ginger dressing, cashew butter, and coconut aminos. Blend until smooth and well incorporated. Add about 1/2 cup of dressing to the bowl with the mini sweet peppers and cucumbers.

Next, add some everything but the bagel seasoning and the chili crunch. Mix together all the ingredients until the dressing is evenly coated. Serve and enjoy within a week of making.

Ingredients
  

  • 3-4 Persian or regular cucumbers
  • 3 cups sliced mini sweet peppers
  • 1 cup sesame ginger dressing
  • 2 tbsp coconut aminos
  • 1/2 cup cashew butter
  • 2 tbsp everything but the bagel seasoning
  • 1-2 tsp chili crunch

Instructions
 

  • Carefully cut and slice the mini sweet peppers and cucumbers, then add them to a bowl.
