What you will need
Dates – I like to use Medjool dates because they are bigger and easier to work with.
Chocolate – I use dairy and refined sugar free chocolate, but you can use any type of chocolate you prefer!
Apples – My absolute favorite apple is honey crisp! I love the sweet and tart flavor is has and enjoy it over the traditional granny smith apple.
Almonds – I like to use sliced almonds but you can use whole as well. If you cant eat almonds you can substitute for cashews instead.
Pretzels – I use gluten and grain free pretzels by the brand Savor by Suzie.
Cashew Butter – This is what we will use to make our caramel sauce! You can substitute with almond butter, however I think the cashew butter gives more of a caramel flavor.
Maple Syrup – This is what we will use to sweeten the caramel sauce! You can probably use coconut sugar as well.
Coconut Oil – This is what we will use to thin out the caramel.

How to make the caramel apple date bark
First, warm up your dates either by heating them up in the microwave for 30 seconds or in the toasted oven for 1 minute at 350 degrees.(this softens them up and makes them easier to flatten)
Then line up the dates on a parchment paper lined sheet pan in 5 rows of 4 and squish them down and close together. Sprinkle the sliced almond on top of the dates.
Next, melt the chocolate chips and then pour over the dates and almond then spread out evenly. (leave a little bit of melted chocolate for drizzling) Top the melted chocolate with the pretzels covering most of the bark. Chop the honey crisp apple into small pieces and top the pretzels with them.
In a small sauce pan on low heat, warm up the cashew butter, maple syrup, and coconut oil. Warm until everything is well mixed and a caramel consistency. Drizzle the cashew caramel over top of the bark. Drizzle the remaining melted chocolate and then stick the bark in the freezer for a few minutes. Chop the bark into smaller pieces and enjoy!
