Peppermint Cream Filled Chocolate Trees
For all my chocolate-mint lovers out there, this one is for you! These peppermint cream filled chocolate trees are a fun festive treat to share with friends and family! They are made with better for you ingredients and taste almost like an Andes mint but even BETTER! The filling is so creamy and is made with coconut cream, coconut butter, a natural green food coloring, and peppermint flavoring. They are seriously “melt-in-your-mouth” goodness!

What you will need
Chocolate Chips – I use dairy and refined sugar free chocolate chips! You can try using milk chocolate as well.
Coconut Oil – This is what we will melt the chocolate with to thin them out a little!
Coconut Cream – For a dairy free filling we will use some coconut cream from the can.(make sure to use no liquid part!)
Peppermint Extract – This is what gives these chocolate trees a nice peppermint flavor that makes them similar to Andes mints.
Coconut Butter – We will mix the coconut cream with a little coconut butter to give the filling a more sturdy texture to work with.
Powdered Monk Fruit – This is what we will use to sweeten the peppermint cream filling with. You can also substitute with powdered sugar.
Natural Green Food Coloring – I like to use the Watkins brand.
Natural Festive Sprinkles – I love these ones by the brand Supernatural.
Silicone Tree Mold – I found a really cute one from amazon that was pretty inexpensive.

How to make the peppermint cream filled chocolate trees
First, melt the chocolate chips with the coconut oil in a microwave safe dish. Heat in 30-second increments and stir in between.(You can also use a double boiler if you don’t want to use the microwave.) Add 1 tsp peppermint extract to the melted chocolate and stir well.
Then, add a couple of spoonful’s of the melted chocolate to the Christmas tree silicone mold and spread out well, including up the side a little bit. Place in the freezer for a few minutes to harden.
Next, In a bowl, mix together the coconut cream, melted coconut butter, green food coloring, powdered monk fruit, and the other 1/2 tsp peppermint extract. Take the mold out of the freezer and add a couple of spoonful’s of the peppermint cream mixture, leaving a little room on the sides. Place in the freezer for a few minutes to set.
Add the rest of the melted chocolate on top of the chocolate trees and place back in the freezer for a few minutes. Take the chocolate trees out of the mold and drizzle a little more chocolate on them and add some festive sprinkles. Store in the fridge and enjoy!
