Pumpkin Chocolate Chunk Collagen Balls

These pumpkin chocolate chunk collagen balls are the perfect snack for the season and are packed with protein, healthy fats, and antioxidants. I love collagen for supporting my hair, skin, nails, gut, and joints. Definitely save and make this recipe for a delicious treat to enjoy throughout the week!

What you will need

Almond Flour – This makes the texture of the collagen balls more like cookie dough.

Collagen Peptides I like to use grass fed hydrolyzed collagen peptides which are formulated for better absorption. I use an unflavored but you can use a vanilla flavored collagen as well.

Pumpkin Puree – We will be using some real pumpkin in this recipe which adds more nutrients and a slight pumpkin flavor which isn’t overpowering.

Coconut Butter This helps firm up the texture of the collagen balls when chilled in the fridge. Coconut butter is rich in healthy fats that will help keep you more satiated! If you don’t have coconut butter, I don’t recommend substituting with it coconut oil because it will not work the same.

Cashew Butter This gives the collagen balls a more chewy texture while also providing some protein and healthy fats.

Maple Syrup – This is what we will use to sweeten the collagen balls with. You could also substitute with honey or powdered monk fruit.

DF Chocolate Bar – Two of my favorite brands that make dairy, gluten, and refined sugar free chocolate bars are Hu Kitchen and Evolved Chocolate.

Pumpkin Spice – Adding touch of pumpkin spice gives these collagen balls a fall flavor note.

Vanilla Extract – This adds a nice flavor note that is sweet and pairs well with the other flavors.

Himalayan Salt – I like to add a touch of salt to offset some of the sweetness of the other ingredients in this recipe.

How to make the pumpkin chocolate chunk collagen balls

First, in a bowl, mix together the almond flour, collagen, pumpkin spice, and salt. Then in a separate bowl, mix the maple syrup, pumpkin puree, coconut butter, cashew butter, and vanilla extract.

Mix together the wet and dry ingredients until a thick sticky dough like texture forms. Then fold in the chocolate chunks and set the bowl in the fridge for at least 30 mins.

Take bowl out of the fridge and roll into about 15 balls.(They might be a little sticky) Store the balls in the fridge and enjoy throughout the week.

Ingredients
  

  • 1 cup almond flour
  • 1/2 cup melted coconut butter
  • 1/2 cup raw cashew butter
  • 1/3 cup pumpkin puree
  • 1/2 cup unsweetened or vanilla collagen
  • 2 tsp pumpkin spice
  • 2 tbsp maple syrup
  • 1/4 tsp Himalayan salt
  • 1 tsp vanilla extract
  • 1 dairy free chocolate bar chopped into small chunks

Instructions
 

  • In a bowl, mix together the almond flour, collagen, pumpkin spice, and salt.
  • In a separate bowl, mix the maple syrup, pumpkin puree, coconut butter, cashew butter, and vanilla extract.
  • Mix together the wet and dry ingredients until a thick sticky dough like texture forms.
