Matcha Frankenstein Cookies
If you’re looking for a cute and spooky treat to make for Halloween, then you definitely need to make these matcha Frankenstein cookies! These cookies are so much fun to make and will definitely impress at any Halloween party. The matcha powder gives them the perfect green color without overpowering the flavor! They taste like chocolate iced sugar cookies, but without all the ultra processed ingredients.

What you will need
Matcha Powder – Matcha is what gives these cookies a nice natural green color! This superfood is rich in antioxidants, supports immune health, helps boost the brain, and contains L-theanine which promotes a calming affect. (If you absolutely hate the taste of matcha, you could substitute with any natural green food coloring.
GF Baking Flour – I prefer to use the Paleo blend by Bob’s Red Mill but you can use a regular gluten free baking flour as well.
Raw Cashew Butter – This makes the cookies soft and slightly chewy when baked.
Coconut Oil – To make these cookies dairy free and vegan, we will use coconut oil instead of butter.
Maple Syrup – I like to use this as the sweetener but you can substitute with powdered monk fruit as well for a low sugar option.
Chocolate Chips – This is what makes the hair and stich mouth for our Frankenstein cookies.
DF White Chocolate – We will use a little bit of white chocolate to make the eyes on the cookies.
Baking Powder – This makes the cookies rise a little bit while baking. Don’t use baking soda becasue it will react with the matcha and change the color.
Vanilla Extract – This adds a nice vanilla flavor note to the cookies.

How to make the matcha Frankenstein cookies
First, in a bowl, whisk together the gf flour, matcha powder, and baking powder. Then add in the maple syrup, coconut oil, cashew butter, and vanilla extract. Mix the batter until a dough consistency forms and then place the cookie dough in the fridge for 30 minutes. Once chilled, take the cookie dough and of the fridge and then roll out in between 2 pieces of parchment paper. (Roll into about 1/3 inch thick.)


Next, use a Frankenstein shaped cookie cutter and cut out about 11-12 cookies. Place the cookies on a parchment paper lined baking sheet and bake for 10-11 minutes at 350 degrees. Let the cookies cool completely before icing. Melt the dark chocolate and then pour into a piping bag and cut the tip off, only leaving a small hole. Draw and fill out some wavy hair on the heads of the cookies with the chocolate. Draw a mouth with stitches as well as a stich on the side of the heads.

Melt the white chocolate and add to a piping bad and pipe 2 round circles for the eyes. Add a dot of dark chocolate in the middle of the white circles to complete the eyes. Let the chocolate icing set and store in an air-tight container.
