Honey Pistachio Ricotta Stuffed Dates
Dates are one of those foods that can be so versatile! They can be enjoyed in so many ways, and these honey pistachio ricotta stuffed dates are one of my new favorites! They have a sweet tangy flavor that is so fun, and it’s hard to only eat just one. These dates make a great appetizer and snack option, and you only need 4 simple ingredients!

What you will need
Dates – You will want to use Medjool dates because they are larger and easier to stuff!
Ricotta – I absolutely love the dairy free ricotta by Kite Hill! It tastes like the real thing and everyone is always impressed. You can substitute with regular ricotta as well.
Pistachios – I love to use raw pistachios but you can use roasted as well.
Honey – A drizzle of honey on top of these stuffed dates really balances the savory tangy flavors of the ricotta.


How to make the honey pistachio ricotta stuffed dates
- Take each date and cut a slit on one side. Take out the pits and squeeze the ends of the dates to open them up.
- Add some riccota to each date, filling the center.
- Carefully chop the pistachios into small pieces with a sharp knife.
- Sprinkle the chopped pistachios on top of each date.
- Drizzle some honey on top of the dates and enjoy!
