Raw Carrot Ribbon Salad

Raw carrots are honestly one of my favorite things to eat during the summer because they have a sweet flavor and crisp texture that satisfies. I was so excited when I saw this trending raw carrot ribbon salad and knew I had to make it! Raw carrots have so many benefits as well as tasting delicious. They are high in beta carotene, which the body converts to vitamin A, which plays a big role in glowing skin health and vision health! They are also rich in fiber, which supports healthy digestion as well!

What you will need

Carrots – I personally love to use a mix of rainbow carrots which gives colors of orange, purple, and yellow.

Green Onions – This adds such a delicious flavor to the carrot salad and really adds to the Asian flavor inspiration. You can also add in fresh herbs like parsley or cilantro.

Toasted Sesame Oil – Add a nice toasted nutty flavor.

Rice Vinegar – Add a fun tangy flavor to the dressing! You can substitute with apple cider vinegar too.

Coconut Aminos – This adds a sweet umami flavor to the salad dressing.

Maple Syrup – Adds a touch of sweetness to the salad and balances out the acidity from the rice vinegar.

Lime Juice – This adds a fun zesty citrus flavor note.

Sesame Seeds – For a pretty garnish and extra crunchy texture.

How to make the raw carrot ribbon salad

First, carefully peel the carrots into ribbons using a wide vegetable peeler and place them into a large bowl.

Then, add in the chopped green onions, coconut aminos, toasted sesame oil, maple syrup, rice, vinegar, and lime juice.

Next, using tongs or clean hand massage and mix around the marinade with the carrot ribbons.

Lastly, Top with sesame seeds, more green onions, or other fresh herbs if desired.

Eat the carrot salad right away or chill in the fridge for a few minutes before serving and enjoy! (Makes a few servings)

Ingredients
  

  • 8-10 rainbow carrots
  • 4 green onions sliced
  • 1 tbsp coconut aminos
  • 1 tbsp Toasted sesame oil
  • 1 tbsp maple syrup
  • 1 tbsp rice vinegar
  • Juice of 1/2 a lime
  • Sesame seeds for garnishing

Instructions
