Italian Sausage Pasta Soup{Gf-Df}
When I’m craving something hearty and cozy this Italian Sausage Pasta Soup is one of my go to recipes hands down! It’s full of delicious flavors and Italian herbs that will make your taste buds very happy! This soup is simple to make in 1 pot, comes together with minimal effort, and makes enough to share with the whole family! You could also make a batch to meal prep for the week and save time in the kitchen.

What you will need
Italian Sausage – This is definitely one of the stars of the soup and adds such a delicious flavor! If you don’t eat pork then you can substitute with ground turkey or beef.
Chicken Broth – I like to use a low sodium chicken broth but you ca also use a vegetable broth as well. Bone broth would also be a great option to add more protein to this soup!
GF Pasta – I love using a chickpea rotini pasta from the brand Banza because it is higher in fiber and protein.
Coconut Milk – Since this recipe is dairy free, we will add some full fat coconut milk to give it some creaminess.
Canned Tomatoes – I think tomatoes and Italian food are a no brainer and we will add some some to this soup recipe for a great flavor! I recommend using canned tomatoes that have some Italian herbs with them.
Coconut Cream – This will add some extra creaminess along with the coconut milk.
Onion – I like to use a yellow onion but you can use a red or white onion as well!
Garlic – Adding fresh pressed garlic really brings out a great flavor in the soup and is better then the dried powder or granules. If you don’t have fresh garlic on hand you can substitute with some garlic powder.
Kale – This leafy green is rich in vitamins A,K,C, and Folate. It also provides some fiber and goes well chopped up and cooked in the soup.
Tapioca Flour – If you want a thicker soup, mixing some tapioca starch or arrowroot powder with help.
Dried Herbs and Spices – In this soup we will use a combination of dried basil, oregano, thyme, parsley, chili flakes, and a little bit of salt to taste.
DF Parmesan – Adding some dairy free parmesan really brings this soup together and is the perfect topping! I love the brand Violife.

How to make the Italian Sausage Pasta Soup
Cook the Sausage and Aromatics
Heat up a large pot on the stove top over medium heat and then add your Italian sausage. Chop up the Italian sausage into small pieces and cook completely until brown and slightly crisp. Take the sausage out of the pot and place in a bowl lined with some paper towels to soak up some of the grease.
Then, add the chopped onion and minced garlic to the pot and cook until the onions become tender and slightly translucent(about 5 minutes)
Heat the Soup Base
Next, add in the broth, diced tomatoes, and spices to the pot and bring to a boil. Once the broth starts boiling, add in the pasta and cook according to the instructions on the package.(Usually around 10 minutes)
Add the rest of the Ingredients
Once the pasta is fully cooked, add the coconut milk, coconut cream, chopped kale, and cooked Italian sausage into the pot.(Mix the tapioca flour with 2 tbsp water and add to the pot to thicken the soup a little.) Cook the soup for a few minutes or until the kale becomes tender and then take the pot off the stove.
Serve in some bowls and top the soup with some dairy free parmesan and enjoy!
