Apple Pie Yogurt Granola Cups
You have got to make these delicious Apple Pie Yogurt Granola Cups! They are perfect for a busy morning, and are packed with fiber, protein, and healthy fats. I absolutely love making sautéed cinnamon apples during the fall season, and the recipe is a great way to use them! These yogurt granola cups really do taste like apple pie and without all the refined sugars, gluten, and dairy!

What you will need
Granola – I always opt for a grain free granola but you can use whatever granola you’d like. A vanilla or cinnamon flavored one would be the best. One of my favorites is the Purely Elizabeth vanilla almond butter granola in this recipe.
Almond Butter – You can substitute the almond butter for a cashew butter if you can’t do almonds! One of my favorite brands is Julie’s Real which is made with clean simple ingredients.
Yogurt – I use dairy free yogurt but you can always use regular yogurt if your body does ok with dairy! One of my absolute favorite dairy free yogurt brands is Culina.
Protein or Collagen Powder – I always try to incorporate some source of protein in my snack recipes to make them more balanced and filling. You can choose not to add a protein or collagen powder if you don’t have any on hand that would work well.
Maple Syrup – I prefer the taste of maple syrup best over other sweeteners with this recipe. You can always substitute with date syrup, honey, stevia, or monk fruit.
Cinnamon – Cinnamon is the perfect spice to pair with fruit. Ceylon cinnamon is my preferred one and it can support healthy blood sugar levels which I’m all about!
Coconut Oil – This is a great oil to incorporate because it contain MCTs along with healthy fatty acids like caprylic acid, lauric acid, and MCTs. Using coconut oil also helps make the cups more solidified when cold.
Apples – I don’t believe in fearing fruit! Apples are one of my favorite fruits to enjoy especially during the fall season. They are also a great source of fiber, antioxidants, and flavonoids like Quercetin.


How to make the apple pie yogurt granola cups
First, add the granola to a food processor and process until the granola is a crumble consistency. Pour the granola into a bowl along with the almond butter and 3 tbsp melted coconut oil. Mix everything well and then add a couple spoonful’s to each muffin cup. Push down in the middle and spread on the sides to form a granola cup shape. Place the granola cups in the freezer for 30 minutes.
Next, take your apple and chop in into small pieces. In a pan over medium heat, add your apple pieces and remaining 1 tbsp coconut oil. Sautee until the apple are tender and add the cinnamon. Set apples aside to cool.
In a bowl mix together the yogurt and protein powder. Take the granola cups out of the freezer and add a couple spoonful’s of the yogurt to each cup. Top the yogurt granola cups with the cinnamon apples. Store in the fridge and enjoy throughout the week.


How to store the yogurt cups
You can store these cups in the fridge for up to a week and in freezer for up to a month. When you’re ready to eat some, let them thaw out for at least 15 minutes before enjoying.
