Berry Spinach Ricotta Salad
Berries are definitely one of my favorite fruits! If you’re like me, you must try this easy to make berry spinach ricotta salad that is fresh and tangy. This salad is packed with antioxidants and fiber which nourish and support the body. You will also love the homemade strawberry vinaigrette that goes with this salad! It’s great to share with friends and family during any get together over spring and summer.

What you will need
Spinach – This leafy green is packed with essential vitamins and minerals like Vitamins C, A, and K, iron, folate, and potassium. It is a nice salad base as well because it’s not too bitter.
Berries – I used a mix of blueberries and strawberries, but you could use some other berries too.
Almonds – I used slices almonds but you could used chopped or diced as well. They add a nice crunch to the salad.
Dairy Free Ricotta – My favorite ricotta is the Kite Hill brand. You can use regular ricotta as well if you eat dairy.

For the Strawberry Vinaigrette
- Strawberries
- Avocado oil
- balsamic vinegar
- Maple Syrup

How to make the berry spinach ricotta salad
- Add your spinach, berries, almond slices, and ricotta in a large salad bowl.
- Make your homemade vinaigrette by adding the strawberries, avocado oil, balsamic vinegar, and maple syrup into a food processor.
- Process until smooth and well incorporated.
- Pour dressing over the salad and mix everything together using salad tongs.
- Serve and enjoy!
How to store
This salad can get soggy after the dressing has been added. I recommend not adding the dressing until you ar about to eat it so the salad stays more crisp.

Salad Base
- 8 cups spinach

- 1/2 cup sliced almonds
- 4-8 oz dairy free ricotta cheese*

- 1 cup strawberries chopped
- 1/2 cup avocado oil**
- 1/4 cup balsamic vinegar
- 3 tbsp maple syrup
