Honey Smoked Salmon Sweet Potato Rounds
Sweet potatoes are one of my favorite foods because they have a wonderful flavor and are a nutrient dense carb source. They can be enjoyed sweet or savory and these honey smoked salmon sweet potato rounds are such a fun way to enjoy them! The sweet potato rounds are roasted to perfection to ring out the natural sugars and then are topped with a dairy free honey whipped ricotta, smoked salmon, pistachios, honey, and herbs. They make for a fun appetizer or snack!

What you will need
Sweet Potatoes – What people eat and call a sweet potato is actually a yam. The most popular are the Garnet and Jewel Variety. I love Garnet yams and they have such a vibrant orange color due to the carotenoids in them.
Smoked Salmon – My favorite is sockeye salmon but you can use any smoked salmon of your choice. Salmon is a great source of protein and omega 3 fatty acids!
Ricotta – I like to use the dairy free almond based one by the brand Kite Hill. You can use a dairy based ricotta as well if you prefer.
Honey – I always use a raw local honey because it is more nutrient dense. raw local honey may also support immune health as well as be an allergy support.
Roasted Pistachios – Pistachios are bursting with the fiber, minerals, and unsaturated fat that may support healthy blood sugar, blood pressure, and cholesterol levels. They are also rich in vitamin B6 and potassium. (Fun fact: 1oz of pistachios contains more potassium than half a large banana.)
Herbs – You can use either fresh dill, basil, or thyme.
Avocado Oil – This is a great cooking oil for high heat. This is what I roast my sweet potatoes with.

How to make the honey smoked salmon sweet potato rounds
First, preheat your oven to 425 degrees. Carefully cut your sweet potato into 1/4 inch thick round slices. Coat the sweet potato slices with the avocado oil and place on a parchment paper lined baking sheet.


Roast the sweet potatoes for 30 minutes on the bottom rack, flipping them halfway through. Once done, set aside to cool for a few minutes. Next, add the ricotta and honey to a food processor and blend until smooth and creamy.


One the sweet potatoes have cooled down, spread or pipe the honey whipped ricotta cheese onto the rounds. Top each sweet potato round with some smoked salmon, chopped pistachios, fresh dill or thyme, and a drizzle of honey.




Serve the honey smoked salmon sweet potato rounds as an appetizer or snack and enjoy!
How to store
You can store these in the fridge for a couple days however they will be best served fresh.

Equipment
- 1 Sheet pan
- Parchment paper
- 1 small food processor or blender
Ingredients
- 2 large round sweet potato
- 6 oz smoked salmon
- 8 oz dairy free ricotta
- 2 tbsp honey(plus more for drizzling)
- 1/2 cup roasted pistachios chopped
- 2 tbsp avocado oil
- Fresh dill or thyme for garnishing
Instructions
- Preheat your oven to 425 degrees.
- Carefully cut your sweet potato into 1/4 inch thick round slices.
- Coat the sweet potato slices with the avocado oil and place on a parchment paper lined baking sheet.
