White Chocolate Pumpkin Spice Cereal Bars
Cereal is definitely one of those simple joys in life. These white chocolate pumpkin spice cereal bars are such a fun way to enjoy cereal, and have a healthier snack on hand! This recipe has a grain free cinnamon cereal mixed with nut butter and a little maple syrup to sweeten. These bars are dairy free, grain free, and gluten free, and but definitely don’t lack in deliciousness.

What you will need for this recipe
Cinnamon Flavored Cereal – I personally prefer a grain free one but you can use whatever cereal you love! I love the brand LoveBird.
Almond Butter – This is the key to binding the cereal together! You could substitute with cashew butter, but I wouldn’t recommend peanut butter for this recipe.
Maple Syrup – This is my reference for sweetening treats but you could use honey or powdered monk fruit.
Coconut oil – This ingredient helps solidify the cheesecake frosting when cold. It is also a great healthy fat to incorporate into your diet.
Pumpkin Spice – I just use an organic pumpkin spice that is store bought. sometimes you can make it yourself if you have all the traditional spices on hand.
White Chocolate – I use dairy free white chocolate but you can use regular as well!
Vanilla Extract – This gives the cereal filling a delicious flavor note.


How to make the white chocolate pumpkin spice cereal bars
First, in a small sauce pan over medium heat, add the almond butter, 1 tbsp coconut oil, pumpkin spice, and maple syrup. Stir frequently until the everything is well incorporated and creamy. Take the pan off the stove top and then mix in the vanilla extract.
Then, in a bowl add the cinnamon cereal and then pour over the nut butter mixture. Mix together until all the cereal is coated. Transfer the cereal mixture to either 2 loaf pans or a 9×9 baking pan lined with parchment paper. Spread the cereal mixture out evenly and flatten. Place the pan in the fridge to chill for 2 hours.


Melt the white chocolate with the remaining 1 tbsp coconut oil. Separate 1/3 cup of the melted white chocolate from the rest. Add the orange food coloring the the 1/3 cup white chocolate.
Next, take the pan with the cereal bar mixture out of the fridge. Pour the melted white chocolate over top and spread out evenly. Add the orange colored white chocolate to a sandwich bag and cut a small piece off one of the tips. Drizzle the orange white chocolate over top and then place in the freezer for a few minutes to set. Cut the cereal into 9 large pieces or 18 small pieces. Enjoy!
How to Store the white chocolate pumpkin spice cereal bars
Store the pumpkin spice cheesecake bars in the fridge for up to a week or you can freeze them up to a couple months.
