Caramel Apple Chocolate Bark

Caramel apples have always been a favorite of mine and there’s something so nostalgic about biting into a fresh crisp apple covered in gooey caramel. This caramel apple chocolate bark is a fun spin on this classic treat, and is a lot less messy to eat! This bark is made with a few simple ingredients and is dairy, grain, gluten, and refined sugar free. It’s so easy to make and sure to be a party food favorite for the season.

What you will need

Chocolate Chips – I like to use a dairy and refined sugar free ones by Hu Kitchen, but you can use any chocolate chips you prefer!

Coconut Cream – This is what we will use for the base of the dairy free caramel sauce.

Coconut Sugar This is what we will use to sweeten the caramel sauce.

Coconut Oil – Coconut oil is such a great source of healthy fats! I use it in this recipe to make the caramel sauce more thinned out.

Apple Pieces – I used a Granny smith apple in this recipe since it’s the traditional apple used with caramel. You can use whatever apple you want though! Pink Lady or Honeycrisp would be great also.

Grain Free Pretzels – Adding pretzels to this bark adds a nice crunch! I dipped mine in some dairy free white chocolate and added the candy eyes for a fun Halloween look! You can use whatever pretzels you have on hand and they don’t have to be grain free, it’s up to you!

How to make the caramel apple chocolate bark

First, make the caramel sauce by adding the coconut cream and coconut sugar to a small saucepan on the stove over medium heat. Bring the mixture to a boil while and then turn the heat down to simmer. Let it simmer for about 15-20 minutes while stirring frequently. Let the caramel cool down completely at room temp when done reducing.

Next, melt the chocolate chips with the coconut oil in the microwave in 30-second increments until the chocolate is fully melted. Pour the chocolate over a parchment paper lined sheet pan and spread out well. Add some gluten-free pretzels on top of the melted chocolate covering the chocolate evenly.

Carefully cut and slice the Granny Smith apples into small pieces and place them evenly across the chocolate bark. Place the pan in the freezer for about 15 minutes so the chocolate will solidify. Drizzle some of the caramel sauce on top along with a little more melted chocolate and pretzel crumbles. Store in the fridge and enjoy within 2 days.

Notes

Store the bark in the fridge for up to a week, or the freezer for a month.
