Pumpkin Pie Chia Pudding

This Pumpkin Pie Chia Pudding is the perfect thing to prepare for breakfast for a busy week! It’s got all the delicious warming spices plus eating layered food is way more fun in my opinion. This recipe is packed with protein, fiber, and essential fatty acids. You will definitely be nourished and satisfied!

This Pumpkin Spice Chia Pudding parfait is like fall in a cup! It’s so nice to have on hand for a quick and easy breakfast during the busy work week, and I know I’m not the only one who doesn’t always have time to make breakfast. It’s very easy to make a batch the night before just like overnight oats.

This parfait is very filling because the chia seeds provide fiber, protein, and healthy fats which makes it very nutrient dense. I love topping the chia pudding with dairy free whip cream and pumpkin spice, but you could also top it with granola or sautéed cinnamon apples.

What you will need

Coconut Milk – I use a mixture of the full fat coconut milk from the can with regular almond or coconut milk. Using the full fat coconut milk is key to making the chia pudding super creamy!

Chia Seeds – You can use regular or white chia seeds(the white ones make the chia pudding look prettier.) Did you know chia seeds a good plant based source of omega 3s?

Pumpkin Puree – I love adding actual pumpkin in the chia pudding to really being out the flavor.

Maple Syrup – This is my preference for sweetening the chia pudding, but you can substitute with stevia or monk fruit for a low sugar option.

Pumpkin Spice – This ingredient is definitely key to the flavor obviously.

Vanilla Extract – This brings out the sweet notes in the parfait.

How to make the pumpkin pie chia pudding

  • Add the chia seeds, full fat coconut milk, almond milk, pumpkin puree, maple syrup, pumpkin spice, and 1 tsp vanilla extract in a bowl.
  • Whisk everything together and then store in a container in the fridge to set for 4 hours or overnight.
  • Separate the chia pudding into 3 jars to prep for enjoying during the week.
  • When ready to enjoy, top with whip cream, granola, or sautéed apples and enjoy!
