Snickers Stuffed Dates
I am a firm believer in not restricting treats completely out of your diet. You can still have a healthy balanced diet while including them! These Snickers Stuffed Dates have no added sugar and are made with whole food ingredient that contain healthy fats, protein, and antioxidants. They are such a joy to eat and will make your mood uplifted for sure!

This recipe consists of only made with 5 ingredients and is so easy to make! These stuffed dates really do taste like snickers bites because dates have a caramel like flavor! Dates are also rich in vitamins and minerals which makes them a healthier treat option! They are also rich in fiber and may support digestive health!
The cashew butter provides a source of healthy fats and protein which makes this snack more blood sugar balanced! The dark chocolate also provides antioxidants and essential vitamins and minerals. If you’re looking for more whole food based treats, this recipe is definitely for you!

What you will need
Dates – I personally love medjool dates because they are bigger and a good size for stuffing!
Cashew Butter – I prefer using a creamy roasted cashew butter over peanut butter! You can use peanut butter too though! Peanuts can be inflammatory for some people so I like using cashew butter as an alternative!
Dark Chocolate – I’m a dark chocolate fan all the way! One of my favorite dark chocolate brands to use is Lily’s because they sweeten their chocolate with stevia! If you prefer milk chocolate over dark chocolate you can definitely use that instead.
Cashews – You can use raw or roasted cashews! If you are making these stuffed dates with peanut butter, use chopped peanuts instead!
Coconut Oil – This is a great oil to melt the chocolate with and makes it thinner for dipping! Coconut oil contains healthy brain boosting fats and is one of my top cooking oils.

How to make the snickers stuffed dates
First, Cut the dates longways and take the pits out. Then, take your cashew or peanut butter and put into a plastic bag and cut one of the tips. Squeeze the nut butter into the dates.
Next, melt your chocolate chips with the coconut oil either in the microwave in 30 sec increments or in a double boiler. Once the chocolate is melted, dip each date into the melted chocolate and place on a parchment paper lined baking sheet. Set them in the freezer for a few minutes.
Take the dates out of the freezer and drizzle more chocolate on top and sprinkle the chopped cashews or peanuts. Store in the fridge and enjoy throughout the week!

- 15-20 dates
- 1/3 cup creamy roasted cashew butter(or PB)

- 1 tsp coconut oil
- 1/3 cup chopped cashews(or peanuts)
