Healthy Ferrero Rocher Truffles

This recipe is a fun healthy twist on the classic hazelnut chocolatey treat. These Healthy Ferrero Rocher Truffles have a delicious date cacao hazelnut filling and a creamy chocolate coating with crushed hazelnuts. They are made with nutrient dense ingredients and are dairy, grain, gluten, and refined sugar free! I’m am all about enjoying healthy treats throughout the week and this recipe is definitely top notch(no bias at all haha.) Warning: You can’t have just one!

What you will need

Dates – I personally like to use Medjool date because they are a nice big size! Dates are natures candy and are a fun way to get more fiber into your diet!

Hazelnut Cacao Butter – Instead of using Nutella, I actually use an organic hazelnut cacao spread that is sweetened with coconut sugar instead of cane sugar. Such a delicious spread!

Almond Flour – This is my preferred flour to use for the truffle filling. It helps bind it together. If you can’t eat almonds you could try using 1/2 cup tapioca flour instead.

Coconut Flour – This flour helps to absorb some of the oil from the hazelnut cacao spread. I don’t recommend skipping this ingredient or substituting it because other flours don’t absorb liquid or oil the same way.

Hazelnuts – In this recipe we will crush some of the hazelnuts to mix with the melted chocolate for the classic Ferrero Roche chocolate coating. We of course have to stuff a whole hazelnut in the center for that traditional filling.

Chocolate Chips – I use dairy and refined sugar-free chocolate chips, but you can use milk chocolate as well if you can tolerate dairy.

Coconut Oil – We will melt the chocolate with a little bit of coconut oil to thin it out a bit! This helps for dipping the truffles and coating them evenly!

How to make the healthy Ferrero Rocher truffles

First, add the dates, cacao hazelnut butter, almond flour, and coconut flour in a food processor. Processor until a dough like consistency forms. Then, Place the truffle filling mixture in the fridge for 30 mins to chill.

Take the cacao hazelnut date mixture out of the fridge, and roll the mixture into balls, placing a whole hazelnut in the center. Next, melt the chocolate chips with the coconut oil in the microwave at 30 sec increments or by using a double boiler.

Dip each truffle ball into the melted chocolate and place on a parchment paper lined baking sheet. Let the chocolate set completely before drizzling more chocolate on top. Sprinkle some crushed hazelnuts on top for a pretty look

Store them in the fridge and enjoy throughout the week!

Equipment

Ingredients
  

  • 2 cups pitted dates(soaked in hot water for 30 mins)
  • 1 cup cacao hazelnut butter
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 9 oz dairy free chocolate chips
  • 1 tbsp coconut oil
  • 1/2 cup chopped hazelnuts(plus a few whole ones)

Instructions
 

  • Add the dates, cacao hazelnut butter, almond flour, and coconut flour in a food processor. Processor until a dough like consistency forms.
  • Place the truffle filling mixture in the fridge for 30 mins. Then, take out and roll the mixture into balls, placing a whole hazelnut in the center.
  • Melt your chocolate chips with the coconut oil in the microwave at 30 sec increments or by using a double boiler.
  • Add the half a cup of hazelnuts into a food processor to crush into small pieces. Add the chopped hazelnuts to the chocolate.
  • Dip each truffle ball into the melted chocolate and place on a parchment paper lined baking sheet. Let the chocolate set.
  • You can drizzle more chocolate on top and add more chopped hazelnuts for a pretty look.
  • Enjoy!
