Protein Cookie Dough Cups

Chocolate chip cookie dough is definitely one of my favorite treats! There is no shame in enjoying regular edible cookie dough. However, I wanted to make a recipe that is high in protein, healthy fats, and lower in sugar for a more balanced option. These cookie dough cups are dairy, grain, gluten, and refined sugar-free and taste fabulous! They also have a rich and decadent chocolate ganache layer that makes them next level!

Why you will love these protein cookie dough cups

  • They are made with real food ingredients that are nutrient dense.
  • The cookie dough texture is on point and is completely safe and edible!
  • They have the perfect balance of sweetness and a touch of sea salt.
  • When you need an easy snack to have on hand throughout the week, these are great!
  • They are great for those who have dietary restrictions!
  • If you have kiddos, they are a great healthy treat option.

What you will need

Raw Cashew Butter – Cashews are a great source of fiber, heart healthy fats, and plant based protein. I love using raw cashew butter because it is more mild and has a naturally sweet taste to it. It is the perfect nut butter for a cookie dough flavor and texture! You can substitute with raw almond butter as well if you can’t eat cashews.

Almond Flour – I love using almond flour in my goods because it is higher in fiber and protein than other flours. If you can not eat almonds or have a sensitivity, you can substitute with cassava or tapioca flour.

Vanilla Protein Powder – I like to add protein to my treats to make them more balanced and blood sugar supportive. I love using a vanilla collagen protein, but you can use your favorite plant based one too.

Maple Syrup – This is my sweetener of choice for the protein cookie dough cups. If you want a lower sugar option, you can use powdered monk fruit instead.

Chocolate Chips – I use dairy and refined sugar free chocolate chips by Hu Kitchen. You can substitute with ant chocolate chips you prefer.

Coconut Cream – This is what we use to make the chocolate ganache a softer texture. Make sure to use full fat coconut cream from the can!

Sea Salt Flakes – Adding a touch of sea salt really balances out the sweetness in these cups!

How to make the protein cookie dough cups

First, in a bowl, mix together the cashew butter, almond flour, protein powder, and maple syrup. Then, fold in 1/2 cup of the chocolate chips making sure they are well spaced throughout the cookie dough.

Then, add the cookie dough mixture to 12 silicone muffin cups and smooth out the tops. Place them in the fridge to start firming up while you make the chocolate ganache.

To make the chocolate ganache, melt the coconut cream and the remaining 1 1/2 cups of chocolate chips in pan on the stove over low heat.  When everything is melted together, take the pan off of the heat and then pour evenly over top the cookie dough cups.

Place cookie dough cups in the fridge to set for a couple of hours to set. When the cookie dough cups are firm, drizzle some melted chocolate on top along with some sea salt flakes and enjoy! Store them in the fridge and enjoy throughout the week!
