Birthday Cake Protein Bars
Who doesn’t love a good birthday cake flavored snack? These Birthday Cake Protein Bars are definitely a delight to the taste buds and nourishing for the body! I know what you’re think but don’t worry, these bars are actually low carb and low sugar! They are packed with healthy fats from cashew butter and coconut oil which give more sustained energy. These bars are so easy to make and nice to have on hand when you need a little pick me up!

What you will need
Raw Cashew Butter – This is what makes these protein bars so creamy and provides a great source of healthy fats! Cashews are also rich in fiber and essential minerals like copper, magnesium, and manganese.
Almond Flour – This is one of my favorite flours to use in my recipes because it is gluten free, low carb, and higher in fiber than most flours which makes it more blood sugar friendly.
Coconut Flour – This is another great flour that makes the texture of these protein bars more dense. Coconut flour also absorbs oils and liquids which can really balance out the consistency.
Vanilla Protein Powder – I use a collagen protein powder to support gut, joint, skin, and hair health! You can always use a plant based protein powder as well. The vanilla flavor really makes these bars taste like birthday cake!
Nut Milk – You can use almond, coconut milk, or any milk alternative.
Coconut Oil – This provides more healthy fats and helps keep the bars more solidified when chilled.
Maple Syrup – I like to use a touch of maple syrup to sweeten but you can omit this ingredient if the mixture is sweet enough to your liking from the protein powder.
Vanilla Extract – This is definitely a must when making anything birthday cake!
White Chocolate – This will serve as the “frosting” for the protein bars and really adds to the sweet flavor!
Natural Rainbow Sprinkles – Life is way more enjoyable when there are sprinkles involved! It really is the perfect topping to these delicious bars and wouldn’t really feel like birthday cake without them! i use artificial dye free sprinkles.

How to make the birthday cake protein bars
First, In a bowl, mix together the protein powder, almond flour, and coconut flour. Then In a separate bowl, mix together the cashew butter, coconut oil, vanilla extract, maple syrup, and nut milk.
Combine the wet and dry ingredients and mix well. Scoop mixture into the silicone bar molds or pour into a parchment paper lined loaf pan. Smooth out the top of the bars and place in the fridge for 30-45 mins to set.
Next, take the bars out of the fridge and place them on a parchment paper lined pan.(If using a loaf pan, cut into 8 bars.) Melt your white chocolate and drizzle over top of the protein bars. Add some rainbow sprinkles on top as well.
Store in the fridge in an air tight container and enjoy throughout the week!

Birthday Cake Protein Bars
Equipment
- 1 silicone bar mold or a loaf pan
Ingredients
- 1/2 cup creamy raw cashew butter
- 3/4 cup almond flour
- 3 tbsp coconut flour
- 6 scoops vanilla protein powder
- 1/4 cup nut milk(warm)
- 1 tbsp melted coconut oil
- 2 tbsp maple syrup or powdered monk fruit
- 1 tsp vanilla extract
- Natural rainbow sprinkles
- 1 Dairy free white chocolate bar
Instructions
- In a bowl, mix together the protein powder, almond flour, and coconut flour.
- In a separate bowl, mix together the cashew butter, coconut oil, vanilla extract, maple syrup, and nut milk.
- Combine the wet and dry ingredients and mix well. Scoop mixture into the silicone bar molds or pour into a parchment paper lined loaf pan.
- Smooth out the top of the bars and place in the fridge for 30-45 mins to set.
- Take the bars out of the fridge and place them on a parchment paper lined pan.(If using a loaf pan, cut into 8 bars.)
