Creamy Watermelon Kiwi Mocktail
I had to get in at least one more summer mocktail before the season ends. This creamy watermelon kiwi mocktail is SO delicious and SO pretty! Watermelon water is so hydrating, and the flavor pairs so well with Kiwis. I love the layered look that resembles a watermelon in drink form as well. The coconut milk adds a creamy texture to this mocktail, which is very fun. I also like to use a coconut based smoothie drink by Harmless Harvest which is so creamy and loaded with healthy fats!

What you will need
Watermelon – For this recipe we will be making our own watermelon water by blending the straining watermelon cubes. It is so refreshing and hydrating!
Kiwis – This fruit is rich in fiber, antioxidants, and vitamins like C, E, and K. Pairing kiwi with watermelon makes for a fun health supporting fruity drink!
Coconut Milk – Most mocktail that I make are made with fruit juices and sparkling water of some kind. This mocktail has a fun creamy texture from full fat coconut milk. Trust me it is so delicious!
Ice – I like to make my ice in a cute round shaped silicone mold. Square ice is overrated in my opinion!

How to make the creamy watermelon kiwi mocktail
First, make the watermelon water by adding adding about 4 cups of watermelon cubes to a blender. Blend for a few seconds and then strain the watermelon mixture through a mesh or nut milk bag. Set the watermelon water aside.
Next, cut the skin off the kiwis and chop into small pieces. Add them to a serving glass and then use a muddler to mash them to get the juices out.
Then, add the ice to the serving glass and pour over some coconut milk. Pour over the watermelon water and the garnish with some kiwi slices. Multiply this recipe by however many people you are serving and enjoy!

Equipment
- 1 Muddler
- 1 serving glass
- 1 Blender
Ingredients
- 2 kiwis
- 1 cup watermelon water(made with fresh watermelon)
- 1/2 cup full fat coconut milk or coconut smoothie
- 1 cup ice
Instructions
- To make the watermelon water, add a bunch of watermelon cubes to a blender. Blend for a few seconds and then strain the watermelon mixture through a mesh or nut milk bag.
- Cut the skin off the kiwis and chop into small pieces. Add them to a serving glass and then use a muddler to mash them to get the juices out.
- Add ice to the glass, then pour over some coconut milk.
- Pour over the watermelon water and the garnish with some kiwi slices. Enjoy!
